Primo of linguine with pesto. Pesto was made on the weekend to use up a big bag Thai basil that was in danger of spoiling. Two servings of pesto went into the freezer. A starter of 50g of dried pasta per person is the right size for a starter in our household. Secondo of baked hake crusted with panko breadcrumbs mixed with a puree of garlic, preserved lemon, tapenade and olive oil. I brushed some yoghurt onto the fish so the breadcrumb mixture would stick before air frying 10 minutes. Contorno of roasted button mushrooms I air fried on the weekend and warmed up in the microwave tonight.

This was actually from the weekend as I'm not currently cooking ... for reasons.
This was from a hotel restaurant that I expected to be mediocre at best as they often are. Instead it was an excellent meal. Bison carpaccio, shrimp & grits and a rare dessert for me of chocolate old fashioned which was a mousse with cherry orange jelly, brown butter crumble, bourbon caramel. The dessert was sweeter than I like so I didn't quite finish it.

We used to traditional British roast dinner on Sundays but are considering switching to hamburgers which are considerably less work. Burgers were done on a cast iron griddle pan and chips in the air fryer.

I've been tied up the last couple of months but will be back to regular posting this week. A few things I've eaten recently.
Breakfast place: Avocado Benedict with hash browns. I'm a fan of Benedicts but prefer them without the English muffin. This one was phenomenal and I was pleased they put the Hollandaise on the side. It went well with the Bloody Mary.
Last night we went to a new to us Thai restaurant. I had fresh shrimp roll and chicken satay but forgot to take photos of them. For my main I had a chicken larb salad. This one was not typical as they used lettuce instead of cabbage and put it in a bowl. There wasn't enough mint or spice and too much fish sauce. The mango sticky rice was perfect.

Spaghetti with pesto and Argentinean Red shrimp and pesto
Bacon Caesar salad, pork chop with Cholula chipotle salsa and mashed potatoes

Chilean sea bass and a side of avocado, cherry tomato and persian cumber. Dressed with an accidental overdose of olive oil.

Black bean chile con carne. Added salsa, sour cream and avocado.

Boiled artichokes followed by asian fish and chips. The tempura fish and courgette were done in the air fryer. Harden wet batter in a non stick pan, which can be done a few hours in advance. When you want to eat, crisp up in the air fryer for 10 minutes. It's easiest to add a little oil to the tempura batter, so you don't need to oil the skillet. Chips were air fried underneath the fish and courgettes. I added a couple of slices of courgette to sop up leftover tempura batter.

Taco salad: romaine, tomatoes, avocado, salsa, sour cream, cheese and leftover taco meat from the freezer. Meat was ground beef, onion, Mexican spices and cilantro.

Air fried fish and tots. Side of sautéed broccoli dressed with Cholula green sauce whic is made from jalapeño & poblano peppers. My partner and I are mature adults but we both have a weakness for tater tots. They work just as chips/fries with fish.

My anemia is kicking my *kitten* this week so I’ve only cooked once: tofu, Alfredo, and grapes.4 -

A friend came round for dinner and we had Cullen Skink with tomato and pea bruschetta followed by air fryer cheesecake.

There's definitely a learning curve. But overall it's a great tool to have.0 -
We went out to a hot chicken place but I'm not one for spicy food so I went with salmon croquettes with fries and spicy mayo. At home we had an affogato of salted caramel ice cream (with chocolate bits) and banana pudding moonshine. It worked.

Someone gave us an avocado and some cherry tomatoes... which neither of us thought we liked! But I channeled my inner Instagram model and made this for lunch - it was surprisingly tasty!! It was also my first ever attempt at poaching an egg!

Cooking at home. Primo of linguine aglio olio. Secondo of encrusted hake (blitzed capers, tapenade, garlic, anchovy, parsley and olive oil mixed with panko) baked in the air fryer with a contorno of sauteed spinach. This is a low stress meal to produce. The sauce for pasta aglio olio is made within the 10 minutes it takes for the pasta to cook. Afterwards, my household is not so hungry so I don't need to rush into making the main. It takes five minutes tops to make the crust for the fish (blitz together strong tasting stuff with olive oil and mix with bread crumbs, smear one side of the fish in it and bake in the air fryer for 10 minutes at 200C. While the fish is baking, sautee some spinach.
