    there is a Pumpkin Cream cheese spread by giant eagle its 100 cal. for 2 tbs Its to die for its soo good and hits that sweet spot!

    :love: I love this thread! So many amazing ideas that I'll be trying out.
    I posted a recipe for pumpkin muffins on here the other day (throw some frosting on top and they could be cupcakes) and they're reaallllyyyy tasty for anybody interested.

    So far this month I've made pumpkin muffins twice, 1 pumpkin pie, pumpkin latte and a pumpkin frappe. And I'm just getting started! Thanks for all of the ideas!

    I eat these every couple of weeks!! Yummy and full of protein!

    Pumpkin Protein Pancakes

    Serves one (makes 3-4 medium-sized pancakes)

    •Prep time: 5 minutes
    •Cook time: 5 minutes
    Ingredients:

    •2/3 cup old fashioned oats
    •1/4 cup cottage cheese
    •1/4 cup canned pumpkin
    •1 egg
    •1 egg white
    •1/2 teaspoon cinnamon
    •1 tablespoon honey
    Directions:

    •Spray pan with cooking spray and heat to a medium heat
    •Combine all ingredients in a small bowl and blend with an immersion blender until batter is relatively smooth and all ingredients are fully mixed
    •Pour batter onto the warm pan to form three medium-sized pancakes
    •Allow to cook until edges start to harden, about three minutes
    •Flip pancakes and allow to cook until batter is no longer runny, about two more minutes
    •Top with syrup, nutmeg or desired toppings and enjoy

    OMG. These sound AWESOME! Guess who is making these tomorrow for breakfast! :D

    pumpkin pie oatmeal!

    Ingredients
    1/2 cup old-fashioned oats
    1/2 cup skim milk
    1 ripe banana, sliced
    2 dashes cinnamon
    1/4 cup pureed canned pumpkin
    1 dash ground cloves
    1 dash ground nutmeg
    Handful frozen blueberries (optional)
    Directions
    1. Put the oats, milk, sliced banana, and cinnamon into a small pot on the stove.
    2. Stir continuously over medium high heat for about 5 minutes, or until the mixture gets thick and creamy (and starts bubbling). Stir in the frozen blueberries now, if you like.
    3. Turn down heat to medium low and add the canned pumpkin and a dash each of ground cloves and ground nutmeg.
    4. Serve hot and enjoy!

    Roasted Pumpkin and Root Veggies

    take one small/medium pumpkin, take the top off and clean out. Fill with sliced root veggies (onions, potatoes, parsnips, carrots) about 1/2 full or less. Take one package Near East rice pour in with spice pack. Pour in 2 cups water. Replace top of pumpkin, place on cookie sheet, cook at 375* (or in crockpot) a couple of hours or until all is cooked down and yummy! May need to add a little water. Awesome! Can replace Near East rice with brown rice and spices du jour!

    I make pumpkin pie without the crust and call it "souffle" (it's also fat free and sugar free) My favorite way to eat pumpkin is cooked fresh or warmed from the can...hmmm
