As we near fall and with the return of the pumpkin spice lattes I am craving anything pumpkin. Put down some of your favorite recipes or ideas for using pumpkin.
My favorite is spice cake mix and a can of pumpkin, mix and bake as muffins. They are super moist and ooooooh so yummie.

I made the pumpkin protein pancakes posted earlier in this thread for breakfast this morning - OMG SO GOOD!!! i wanna have them everyday now! lol (except i'm now out of cottage cheese so need to get more!).
I had a thought - i thought the pancakes reminded me a lot of...uh...cake lol. so i was thinking you could probably make the pancake batter into little round molds, cook it, and then stack with a layer of sweet cream cheese filling in between to make like a pumpkin pie pancake layer cake! I'm gonna try that for Thanksgiving! thanks to the person who posted about the pancakes - they're my new fave breakfast! :bigsmile: :flowerforyou:0 -

Nutrition Facts:
Nutrition (without walnuts): 1 square = 47 calories, .7 g fat, 8 g carbs, 3.7 g protein
Nutrition (with walnuts): 1 square = 63 calories, 2.3 g fat, 8 g carbs, 4 g protein
Ingredients:
½ C Xylitol Brown Sugar Blend (Ideal)
1 - 4 oz. jar baby food applesauce
2 tsp. ground cinnamon
1 ½ tsp. ground ginger
½ tsp. ground clove
1 tsp. baking powder
1 tsp. baking soda
½ tsp. salt
2 tsp. vanilla extract
4 large egg whites
1 - 15 oz. can of raw pumpkin
2 C oat flour
2 scoops vanilla whey protein
½ cup almond milk
½ C chopped walnuts (optional)
Directions:
Preheat the oven to 350.
Spray a 9 X 13 Pyrex dish with non-stick spray.
Combine first 11 ingredients and mix well.
Add the final 3 ingredients (4, if adding walnuts), and mix until incorporated. Spread batter into the Pyrex dish and bake for 30 min.
Makes 24 squares.
This sounds fabulous, but I don't recognize the first ingredient. Is that like Splenda brown sugar?0 -

there is a Pumpkin Cream cheese spread by giant eagle its 100 cal. for 2 tbs Its to die for its soo good and hits that sweet spot!
I have seen Pumpkin Cream Cheese sold at Sav-a-lot and Aldi's. Very yummy!0 -

imma try pumpkin pancakes!
gonna use the simple greek yogurt recipe I have for pancakes but use pumpkin instead !! should work the same!
6oz greek yogurt (so will try pumpkin!!)
2tbsp egg whites
1/2 cup flour (Reg or wheat , i use reg)
1tsp of baking powder
stir and make like pancakes!!
when doing em greek yog style i add banana or bluberries!
but for pumpkin i may add nana... or mini c chips!

1/2c pumpkin, 1 scoop of protein powder, couple of tbl of cool whip , pumpkin spice , splenda , 1c water and ice ..., make a milkshake ..its outa this world yummy0
