I made the pumpkin protein pancakes posted earlier in this thread for breakfast this morning - OMG SO GOOD!!! i wanna have them everyday now! lol (except i'm now out of cottage cheese so need to get more!).
I had a thought - i thought the pancakes reminded me a lot of...uh...cake lol. so i was thinking you could probably make the pancake batter into little round molds, cook it, and then stack with a layer of sweet cream cheese filling in between to make like a pumpkin pie pancake layer cake! I'm gonna try that for Thanksgiving! thanks to the person who posted about the pancakes - they're my new fave breakfast! :flowerforyou:0 -
To any pumpkin loaf, cake or muffin recipe I add a cup or so of mincemeat .0

OK, I'll be very bad and add this recipe:
Pumpkin Pie Martinis
1/2 cup brown sugar
2 teaspoons pumpkin pie spice - divided
1/2 cup water
2 tablespoons granulated sugar
2 cups half and half - I use fat-free
4 tablespoons pumpkin puree
1/2 teaspoon vanilla
1/2 cup vanilla vodka
In a small saucepan over medium heat, combine the brown sugar, 1 teaspoon of the pumpkin pie spice, and the water. Stir until the sugar has dissolved. Heat to boiling. Remove from heat and cool completely. This is the syrup.
On a shallow plate, mix together the granulated sugar and the remaining teaspoon of pumpkin pie spice.
On another shallow plate, pour out 2 tablespoons of the syrup. Rim your martini glasses by dipping them into the syrup, then into the sugar mixture on the other plate.
In a pitcher, combine the half and half, pumpkin puree, vanilla, and vodka. Stir briskly with a whisk. Add the remaining syrup and whisk it again.
Shake with ice and serve in the rimmed glasses.
Eye-popping good! :drinker:0 -

Really yummy if you use pumpkin pie spice or apple pie spice in place of cinnamon and nutmeg0 -
I love mixing 1 cup of cottage cheese with a half cup of pumpkin. Then you add a little splenda and some cinnamon and nutmeg (or pumpkin pie spice if you have it) It tastes like the filling from a pumpkin Pie.
Also if anyone is trying to watch carbs you can use a box of sugar free yellow cake mix with one can of pumpkin and a little pumpkin pie spice for a different variation of the muffins as well :-)
amazing! I totally have to try this! - I just bought the mini sized cottage cheese cups!0
