Homemade turkey burger (250 calories / 150g burger thanks to some little veggies hidden in the meat) and vegetable potato-carrot-onion pattie (120 calories / 100 g pattie). Served with a salad with no dressing. Big full meal.
Mediteranean chicken (with red bell pepper, onion, olives, carrots and diced tomatoes) and some wedges.

Breakfast was just a carrot and sapota(chikoo) fruit
a little later I had mashed purple yam!
For lunch I had rice, yogurt, radish and radish-leaf curry and pan fried yam
For teatime I had hot chocolate with homemade chocolate mini cookies
And dinner was rice with mini chickpea,potato and garlic curry

Recipe:
1 box of whole wheat or fiber enriched penne
1lb of lean ground beef (I used 93% lean)
1 15 oz can tomato sauce
1 6oz can tomato paste
1 cup of shredded mozarella (I used 2%)
4 oz of 1/3 reduced fat cream cheese
1 cup of fat free sour cream
1 large egg
1 tsp sugar
1/2 tsp of dried oregano
1/2 tsp of dried basil
1/3 cup of water.
Preheat oven to 375 degrees. Cook ground beef. Once it's done, drain the grease if any. Add in tomato paste, tomato sauce, water, salt (to taste), oregano, and basil. Cook on LOW for 15-20 mins so the ingredients can get happy together.
Cook pasta according to directions then drain. In a bowl, combine cream cheese, sour cream and the egg. Mix throughly until all is incorporated.
Get out a pan (9x13). Spray it with some cooking spray. Put a thin layer of the meat sauce on the bottom. Put down a layer of penne. Pour half of the cream cheese/sour cream mixture on top of the penne. Repeat sauce/penne/mixture. Top with mozarella cheese. Bake for 25-30 minutes. Cut into 8th's and go to town

Carrots - Baby, raw, 80 g 28 cal
Tesco - Baby Corn, 25 g 6 cal
Beans - Snap, green, raw, 25 g 8 cal
Generic - Mange Tout 100 g, 25 g 8 cal
Sainsburys - Sugar Snap Peas, 25 grams 9 cal
Morrisons - Chestnut Mushrooms, 50 g 7 cal
Knorr - Chicken Stockpot (Each Pot = 28g Unprepared), 0.5 container (28 g as solds ea.) 13 cal
Per Serving: 98
I bring it to work ready chopped - then just add water and zap it in the microwave for 5 minutes. I sometimes add noodles but not today.

This looks lovely! Altho I had to look up what Laksa paste was. Do you suppose another mild curry paste that was vegan would work as well? I would switch out the chicken broth for vegetable, of course!1 -

they're actually a super quick, super EASY recipe. i didn't feel like going out and buying all the millions of necessary ingredients for the arduous job we all know gluten-free baking is, so i sub'd gluten free pancake mix (of all things - lol!) for the usual gluten-free flour blend, baking powder, and baking soda.
3 cups gluten-free pancake mix (i used bisquick gluten-free pancake mix, but i'm sure other brands like kinnikinnick would work just fine!)
2 eggs
4 tbsp canola oil
1/2 cup light brown sugar
1/2 cup granulated sugar
1 cup soy milk
2 tbsp lemon juice
1 cup frozen blueberries
preheat oven to 400. mix everything together, blueberries last. spoon into greased muffin tin. these don’t rise very much, so fill the muffin cups as tall as you want your muffins to be. bake for 12-15 minutes or until golden brown on the top.4 -

A wonderfull trout stew, with collorfull veggies. 348 calories and delicious.
A version of Mexican Pizza that I tried today. It has 417 calories per serving (about 300 g) and it is great. The layers kind of came down after I put it on the plate... but my taste buds do not care. The homemade salsa, low fat mozzarella and lean beef helped me a lot with getting it yto 417 calories.
