Found this online this weekend...had all ingredients on hand with the expeption of the leeks so I gave it a try and it was wonderful! Comes in at 220 callories per serving.
My Version of.....Thai Cabbage Chicken Soup
3 chicken breast halves, chopped it bite sized pieces OR previously baked and shredded
1 onion, sliced
2 cloves of garlic, minced
10 cups water
chicken boullion (1 tbsp wet or 1 cube)
6 carrots, sliced
6-7 cups of shredded cabbage
1/2 cup fish sauce
1/2 cup chilli sauce (Shriacha)
salt, pepper to taste
Toss everything (except for cabbage, garlic, fish sauce & chilli sauce) in the slow cooker and let it go all day on low for about 6-8 hours...when almost ready to eat, toss in the shredded cabbage and garlic...let it cook down for about 10 minutes until cabbage is tender crisp...season with the chilli sauce and fish sauce...testing to your liking...
Serves up nicely garnished with fresh thai basil and/or cilantro. You can also squeeze a bit of fresh lime on top as well. . Very Delicious!!!0 -

I bought a slow-cooker recipe book, that I don't have on me currently as I am going to bed in a minute. I've made a couple things from it and they were pretty good. I'll be happy to share sometime tomorrow if I have time. If not, I'm still gonna try a couple of these recipes!0
