I made a quick tweak that made this even more delicious. Replace the cocoa powder with sugar free pudding mix, yum!
Ingredients:
1 Scoop vanilla whey protein powder (I use Optimum Nutrition)
1 Tbsp sugar free pudding mix ( I used butterscotch)
1 tsp sugar or sugar substitute (I use Stevia in the Raw)
1/4 tsp baking soda
pinch of salt
¼ cup eggwhite
2 Tbsp coconut milk
1 Tbsp peanut butter
Mix together dry, add wet and stir. Cook just one minute, do not over cook.0 -

I make lots of these, always trying new mug cake inventions just like protein pancakes. I have a blog dedicated to my recipes for clean eating and some other intolerances too. www.mycleanplate.wordpress.com
My favourite is my chocolate one with a choc fudgey frosting....all clean!!!

Can anyone who has made this tell me how many grams of protein powder you are using? Mine has quite a big scoop (35g), and it came out a bit dry. Not sure if too much powder or I just overcooked it? Want to try again as it was still pretty tasty.0

Bump! I only have chocolate protein powder so I'll use that and a drop of vanilla extract. Thanks!!
thanks.. that answers my question! I'm also going to use PB20 -
I just tried one using:
20g of Sentosa high protein milk powder
a bit of vanilla extract
2 tbsp unsweetened cocoa powder
a little bit of baking soda
1 egg yolk
16g jif extra crunchy peanut butter
forgot: 60ml of low fat vanilla soya milk
Not too bad! A bit bitter and not too sweet from the cocoa and no added sweetener, but I'm liking it.0 -
