    A lot of people have been asking me for the cupcake recipe
    * note; probably best for a cheat meal ... haha not the best for you but here goes:

    Raspberry coconut cake:
    - 125 g butter, softened
    - 1 cup caster sugar
    - 3 eggs
    - 1/2 cup of plain flour
    - 1/4 of self-raising flour
    - 1/2 cup of desiccated coconut
    - 1/3 cup of sour cream
    - 150g frozen raspberries

    Cream cheese frosting:
    - 60g butter
    - 160g cream cheese, softened
    - teaspoons coconut essence
    - 3 cups icing sugar

    Decorations:
    - 1 cup flaked coconut (can toast)
    - 15 fresh raspberries

    Steps:
    1) preheat oven to 180 degrees Celsius
    2) beat butter, sugar and eggs in small bowl with electric mixer until light and fluffy
    3) stir in sifted flours, coconut, cream and frozen raspberries
    4) divide mixture into cake trays
    5) bake cakes for about 50 minutes (small ones 40 minutes)
    6) make cream cheese frosting (put all ingredients together in small bowl and mix with electric mixer until light and fluffy)
    7) remove cakes from cases, allow to cool, then spread cakes with frosting
    8) decorate cakes with coconut and raspberries

    Salmon stirfry with broccoslaw and edamame, served with a mango, lime, chilli and corriander salsa


    Is there an online recipe for this meal? looks awesome.

    Thanks - not really I just used what I had in my store cupboard for inspiration (being a student and all haha)

    Salsa:
    1/2 ripe mango, diced
    1 red birds eye chilli sliced (leave the seeds in if you want it really hot)
    small bunch corriander, chopped
    1/2 tsp canola oil
    touch of pepper
    touch of salt

    Salmon stirfry:
    50g edamame
    150g salmon pieces
    Handful of broccoli slaw

    Marinade:
    1 dessert spoon soy sauce
    1cm piece grated ginger
    1 chopped garlic clove
    2 tsp thai sweet chilli sauce
    splash of fish sauce
    1 dessert spoon teriyaki sauce
    1 tsp vinegar
    Good squeeze of lemon juice

    What to do:

    1. Prepare salsa and set aside
    2. Mix all ingredients for marinade and pour over salmon pieces and leave to sit for 30 mins or so (I do this before my 30DS video haha)
    3. Heat a stirfry pan/wok with 1tsp oil until piping hot - add salmon pieces whilst reserving the marinate and stirfry for 2-3 minutes. Remove from pan.
    4. Add veggies to the pan and cook for 2-3 minutes, adding salmon back to the pan and rest of the marinade. Cook for a further minute.

    Voila! Serve with the mango salsa! :)

    Arugula Caper Salad with Prawns.
    A go to favorite of mine! and low calorie. depending on how much cheese and dressing, I can get a huge dinner portion of out of this for around 350 calories!
