The SkinnyTaste Ropa Vieja wasn't bad either!
Today I just made crock pot chicken -- I'm a big fan of throwing things together and seeing what works. I dumped tomato sauce, chopped onion, minced garlic, seasonings (basil, hot pepper etc), and boneless skinless breast. Hours later, I added frozen veggies (whatever I had -- green beans, spinach, broccoli) and fresh veggies (zucchini and orange bell pepper). Pretty dang tasty!0 -

The office does a "stone soup" crockpot just about every day. It's usually about $1-2 per person per meal because we have a fund and people will bring in food items to donate.
6 chicken thighs - skin removed
28 ounce can of diced tomatoes
1 green pepper chopped
1 onion chipped
1 sweet potato chopped
3 cups water
1 cup creamy (or crunchy if you like) peanut butter
Add all ingredients, except peanut butter, to the crock pot. Cook on high for 3 hours. Remove chicken bones. Turn down heat to low for last hour. Stir in peanut butter the last half hour before serving. Add salt, paprika, or hot pepper flakes to taste.

Per serving - 350 calories, 17 carbs, 22 fat, 23 protein, 531 sodium, 8 sugar0 -

slow cooker tikka masala... it probably should be more lik "tikka masala" since it doesn't taste like the take out favorite all that much, but still really great and it comes out to 258 calories per serving.0 -

try your local library, they usually have a crapload of cookbooks. i got several out for slow cookers, 2 were only vegetarian and the others had meat dishes as well0

I 'roast' a whole chicken in the crock-pot. Put 3 balls of foil in bottom of crock-pot, rub a small amount of olive oil on chicken along with whatever seasoning you prefer, place chicken on top of foil balls, cook 4-5 hours on high for a 3-4 pound chicken.
It's wonderful! The aluminum foil keeps the chicken from sitting in the juices.0 -

It's wonderful! The aluminum foil keeps the chicken from sitting in the juices.
This is a yummy & healthy, simple way of preparing chicken. Also instead of foil balls at the bottom you can swap them out for baked potatoes. Just put some potatoes under the chicken (wrap in foil or not, your choice), then place the chicken on top and follow the instructions up above. The potatoes turn out delicious with a hint of chicken flavor.
Of course depending on the age of your Crockpot as that will really determine the amount of time to cook it. The newer ones (in the last 5 years) cook much higher so may take only 1/2 the cooking time, which mine does.
I've seen some recipes like the above where you add add slices of orange & onion under the skin and in the cavity of the chicken. Another choice is lemon and onion instead, Though I much preferred the orange sliced to the lemon.0 -
