Dont forget you can change it up too - works great with pork and green tomatillo salsa as well! Just use the same basics and you've got a whole new taste!

I've actually made some modifications to this recipe and it works out great to make it a little more filling. I have added a can of black beans and a small can of corn and peppers. Also, I now use the low fat/low sodium cream of chicken instead of cream of mushroom for a little different flavor. I put the chicken in a fat free whole wheat tortilla and the sauce, beans, and corn go great with a little brown rice. It is very southwestern!

Anyone else have ideas to change it up a little? I want to cook this so often because it's easy and tasty but I need to keep changing it up a little for the family to stay interested.

I have all these ingredients on hand already. I wish I had discovered this recipe 8 hours ago, I would be trying it right now. I am definitely putting this in the crock in the morning so it will be ready in time for tomorrow's dinner. Thx for the visual too. I can't wait to try it.

I made this tonight and it was a hit! I used peach mango salsa from Costco's and put in a 1/2 cup of diced pineapple instead of the taco seasoning. It was awesome. I was in the mood for something a little sweeter tonight, but I'll probably try the original recipe soon! Thanks!

So we had it tonight with brown rice and sweet corn and everyone seemed to like it! I used Trader Joe's Roasted Garlic salsa, which is nice because it has less sodium than alot of others. It'll be fun next time to switch up the salsas. And rice goes perfect for eating with the tasty juices.
