    Doesn't look like 64 cals to me. Closer to 40? I make a similar thing but with more eggs and it is 62 cals a piece.

    6 medium eggs
    100 grams of phildelphia 3% fat cream cheese
    100 grams of flaked kiln roasted salmon
    50 grams of spinach
    Black pepper

    whisk it all up and ladle into cupcake tins. Bake for 6 minutes. 62 cals, 1 grams of carbs, 6.5 grams of protein. I make a batch and have three for a quick protein packed breakfast before work. YUM! I'll try adding some mushrooms next time.
    Mushroom Spinach Egg Cups

    8 oz. baby Bella mushrooms
    9-10 oz package baby spinach leaves
    4 eggs
    1 tsp olive oil
    1 cup low fat mozzarella cheese, shredded
    Salt and pepper to taste

    You're right, mine came out to 32 calories/cup.

    I do this also but to switch it up I put in feta and a bit of parmesan cheese. Or sometimes I will add bacon bits (not much) with cheddar.
