I've made these before and they're yummy. You can do any mixture of meats, cheeses and veggies. I love broccoli and cheese -just microwave frozen broccoli, let cool (very important, or it will start to cook the eggs), dice well, mix with the egg and top with cheese. I've topped them with bacon crumbles also. You can also sprinkle a little cheese in the bottom of the muffin tin to make a sort of crust. I highly advise spraying the pan with non stick to make your life easier.
One issue I've had is that the egg bakes will start out fluffy like a souffle, but then fall as they cool. Some recipes add Bisquick and that seems to help them keep their shape.0 -

Great recipe, here's another that is quite low cal and the serving sizes are massive and filling, highly recommend adding the extras at the bottom of recipe as well as spinach. It is a vegan recipe but I have feed it to many a person with different diets and everybody has come back for more...also great with fried tomato and toast. basically go nuts with the veggies but remember to measure your portions.The nutritional value is what was on the recipe I find when I put in the ingredients myself it usually comes out lower calories but is really independent on what you add. enjoy

Thank you so much for this receipe, I made these yesterday and had two this morning for a post-workout breakfast and they're delicious and filling. I couldn't get low-fat grated mozarella so I used regular but half the amount and hopefully this still keeps the fat down.
I'm pescetarian and struggle with getting enough protein so this is a really helpful receipe - thank you!0 -
