    Green Beans and Ham

    My mother always made green beans and ham in the oven when I was a kid. I just put it in the crock pot. It’s great to have ready when I get up in the evening ( I work night shift). It's almost oo easy....

    3- 15oz cans cut green beans
    2 cups cubed ham
    1 chopped onion
    Salt & pepper to taste

    Just put it all in the crock pot in the morning and set it to low. Let it cook all day and serve with buttered rolls. Yummy!!
    Serves about 4 people at about 210 calories a serving (not including the buttered roll)
    One of may favorite fall recipes!

    I almost forgot my favorite one…Pork and Sauerkraut

    4 lean pork chops
    2 cups sauerkraut
    1 chopped onion

    Put the pork chops in the crock pot and mix the sauerkraut and chopped oinion and put on top of the pork chops. Let cook on low for 4-6 hours. Be sure to use the lowest setting. If you cook it too high the pork chops will fall apart and get mushy. Still tastes good just has an odd texture. I serve it with mashed potatoes . Good old fashioned German meal. Yum!
    Serves 4 at about 275 calories each (not including the potatoes)

    i make that roast beef and can of mushroom recipe alot.

    so ill share an alternate recipe --

    using a large package of chicken breast or other boneless chicken -- diced onion and can of rotel

    cook on low for 6-8 hours until done. shred with fork and eat on tortillas.

    Lime Chicken Tacos
    Ingredients

    * 1-1/2 pounds boneless skinless chicken breasts
    * 3 tablespoons lime juice
    * 1 tablespoon chili powder
    * 1 cup frozen corn
    * 1 cup chunky salsa
    * 12 flour tortillas (6 inches), warmed
    * Sour cream, shredded cheddar cheese and shredded lettuce, optional

    Directions

    * Place the chicken in a 3-qt. slow cooker. Combine lime juice and chili powder; pour over chicken. Cover and cook on low for 5-6 hours or until chicken is tender.
    * Remove chicken; cool slightly. Shred meat with two forks and return to the slow cooker; heat through. Stir in corn and salsa.
    * Cover and cook on low for 30 minutes or until heated through. Serve in tortillas with sour cream, cheese and lettuce if desired. Yield: 12 tacos.


    Nutrition Facts: 1 taco (prepared with fat-free tortillas; calculated without sour cream and cheese) equals 148 calories, 2 g fat (trace saturated fat), 31 mg cholesterol, 338 mg sodium, 18 g carbohydrate, 1 g fiber, 14 g protein. Diabetic Exchanges: 2 very lean meat, 1 starch.

    one cup favorite barbeque sauce (we prefer cattleman's brand)
    pork loin

    cook 6-8 hours on high. shred and serve on a wheat bun with thick dill pickles and red onion slices.

    Italian Beef

    3-4 lb chuck roast
    1 pkg. Good Seasons Italian Dressing mix
    1 pkg. Beef Au Jus mix
    1 bottle beer
    1/2 cup water
    Hot or mild pepper rings, to taste
    2 bay leaves
    2 to 3 pinches thyme

    Place beef in cooker. Add rest of ingredients. Cook on low 7 hours. Remove bay leaves. Shred beef with fork and serve on Italian rolls.

    i make something similar, but it is three ingredients:

    roast
    one package dry italian seasoning
    one jar sliced banana peppers (including liquid)

    so tasty in tortillas with a bit of parmesan cheese!

    one package dry italian seasoning
    one package cream cheese (reduced fat or fat free is fine too)
    one can cream of mushroom soup
    1/2 cup grape juice or red wine

    cook ingredients together on low for 6 hours. serve over egg noodles for an easy chicken stroganoff.

    I found this Chili recipe on the internet and tried it. It is so good it tastes like Wendy's chili.

    Ingredients

    1 pound ground beef
    3/4 cup diced onion
    2 cloves garlic, minced
    2 (10.75 ounce) cans tomato puree
    1 (15 ounce) can kidney beans with liquid
    1 (15 ounce) can kidney beans, drained
    1 (15 ounce) can cannellini beans with liquid
    1/2 tablespoon chili powder
    1/2 teaspoon dried parsley
    1 teaspoon salt
    3/4 teaspoon dried basil
    3/4 teaspoon dried oregano
    1/4 teaspoon ground black pepper
    1/8 teaspoon hot pepper sauce

    Directions

    Place the beef in a skillet over medium heat, and cook until evenly brown. Drain grease.
    Place the beef in a slow cooker, and mix in onion, garlic, tomato puree, kidney beans, and cannellini beans. Season with chili powder, parsley, salt, basil, oregano, black pepper, and hot pepper sauce.
    Cover, and cook 8 hours on Low.

    Ooooh, I LOVE my slow cooker!! I made up a recipie last week for meat balls in tomato sauce :)
    Serves 4

    500g Lean beef mince
    1 large onion, finely chopped
    30g fresh breadcrumbs
    1\2 beef stock cube, crumbled
    black pepper

    For the sauce:

    2 tins chopped tomatoes
    1 tsp mixed dried herbs
    salt and pepper

    1) Mix mince, onion, breadcrumbs, stock cube and pepper in a large bowl (use your hands!!!)
    2)Roll mixture into 16 balls and flatten with the palm of your hand. Place on a plate, put in fridge and chill for 30 mins.
    3)Meanwhile, using a hand blender, combine all the sauce ingrediants, then heat in a pan.
    4)Brown the meatballs in a non stick frying pan. Transfer sauce and meatballs into the slow cooker. Cook on high for 6 hours
    5)Serve with pasta

    BBQ Pulled Pork

    -2 lbs of pork loin or roast
    - 1 cup of BBQ sauce
    -1/4 cup apple cider vinegar (or apple juice, whatever is on hand)

    Cook on low 8 hours or on high 4.

    For more lbs of roast, just increase the BBQ sauce but keep the other ingredients the same.

    Last time I made a 5lb roast with one bottle bbq sauce. Delicious and everyone thinks its a family recipe. (shhh)

    Go to foodtv.com and get Robin Miller's "CHIPOTLE-LIME-CHICKEN THIGHS AND JAMAICAN RICE AND BEANS" slow cooker recipe (I also made it with skinless thighs and breasts, to cut calories) It's delicious!. and will fit into your diet plan.

    Another good chicken recipe is

    "SLOW COOKED TEX-MEX CHICKEN AND BEANS"
    For this memorable fix-and-forget chicken stew, use a high-quality salsa to save time without skimping on flavor; choose a jar with a short ingredient list.
    Ingredients
    * 1 cup dried pinto beans, rinsed
    * 1 jar (11 ounces) mild or medium salsa (1 1/2 cups)
    * 2 tablespoons chopped canned chipotle chiles in adobo sauce
    * 2 tablespoons all-purpose flour
    * 1 1/2 pounds boneless, skinless chicken thighs (about 8)
    * Coarse salt and ground pepper
    * 1 medium red onion, chopped
    * 1 red bell pepper (ribs and seeds removed), chopped
    * 1/4 cup reduced-fat sour cream, for serving
    * 1/4 cup chopped fresh cilantro, for serving
    Directions
    1. In a 5- to 6-quart slow cooker, stir together beans, salsa, chiles, flour, and 1 cup water. Season chicken with salt and pepper; arrange on top of bean mixture. Scatter onion and bell pepper on top of chicken.
    2. Cover and cook on low heat for 8 hours. (Do not open lid or stir.)
