Made this last night! (sorry if it has been posted already, I haven't read through the whole thread)
Crock Pot Moroccan Stew from http://www.eatliverun.com/crock-pot-moroccan-stew/
Ingredients:
1 large red bell pepper, diced
1 large orange bell pepper, diced
4 cups diced butternut squash
2 zucchini, chopped
1 large yellow onion, diced
3 garlic cloves, minced
1 15-oz can diced tomatoes
1 cup green lentils, dry
2 bay leaves
1 can chickpeas, drained and rinsed
4 cups water or veggie broth
1 tsp red chili flakes
1 tsp smoked paprika
1 ½ tsp cinnamon
2-3 tsp salt
Greek yogurt, for serving
Fresh mint, for serving
Olive oil, for drizzling
Directions:
Combine all ingredients, minus the chickpeas, in a slow cooker. Turn heat to LOW and cook for 9 hours. Add the chickpeas and cook on low for one more hour.Taste and add more salt if necessary.
Serve bowls of stew with a drizzle of olive oil, big dollops of Greek yogurt and fresh mint.Time:0 -
I had some skinless boneless chicken breasts and the kids were getting out of school early today. So i threw this together this morning so I could give them lunch easily when they got home. It turned out pretty good.
5 boneless skinless chicken breasts
1 can Campbells chicken condensed soup
I packet McCormick Beef Stroganoff mix
I wanted to add some frozen veggies but forgot.
I boiled some pasta shells, broke up the chicken and spooned it over. I couldn't resist and made a sandwich for myself with some of the chicken. Yummy. It would probably go great with some quinoa or mashed potatoes too.
Easy and verstile. I loved it.0 -

I do a different version of angel chicken
6 chicken breasts
1 can 10 3/4 oz cream of mushroom soup
8 ounce of light/fat free cream cheese
1/1 cup dry white wine
1 cup mushrooms (more or less if you want)
1/4 cup red onions
1-2 garlic cloves
1 Garlic and Herb seasoning packet
combine and cook on low for 6-7 hours
I will usually wait until there are only 2 hours left to add the mushrooms so the flavoring isn't cooked out of them. Serve over rice or pasta!
Beef Stew
2 lbs beef stew meat
4 cups beef broth
1/2 cup flour
baby carrots (I don't measure)
1/2 Green pepper, chopped
1/2 cup red onion, chopped
3-4 red potatoes, diced
1/2 cup of mushrooms (optional)
1 tsp of worcestershire sauce
1-2 garlic cloves
salt and pepper to taste
Combine all ingredients in crock except for 1 cup broth and the flour. Cook on low for 7-8 hours. Before serving mix flour and broth together, pour into crockpot to thicken.0 -

So many good recipes to try. I did use my crockpot recently for the chicken taco with salsa, lime juice, taco seasoning. Turned out very good.0

I used a potato instead of the turnip and didn't put the kale in (because I didn't have any and couldn't be bothered going to the shop).
The recipe calculator puts it at about 135 calories a bowl

8 boneless Pork Chops at least 1/2 in. thick
1 packet Hidden Valley Seasoning Packet
1 or 2 cans Cream of Chicken Soup - if you use 1 can, then add 1 can of water
Mix all ingredients together in crock pot, cook on Low for about 6 hours.
Makes the most delicious, tender pork chops ever.... with a great gravy.

Thanks to all who've added to these great threads...Crockpots are so helpful and so much can be done with them.
I wince when I see a 'cream of soup' ingredient in a recipe anymore because since eating healthier I try to watch the sodium more carefully so I usually slowly skim over those thinking.......mmmm LOL
But it doesn't mean I don't remember how yummy it all tasted back in the day with the canned soups.
I do have a 'cream of soups' dry ingredient recipe (I'll share it when I get a moment if anyone is interested) that you add water to that works the same way but has a bit healthier ingredients in it.. I really need to make up some batches of the powder and stick them in the cupboard for recipes like these. Because...porkchops
