    Pan fried salmon, couscous with pine nuts & sesame seeds, purple sprouting broccoli and caramelised onions.

    baby red potatoes, 4 of them cut up. tossed with olive oil, oregano and minced garlic. baked in the oven for 15 minutes. with a bed on shredded lettuce on the side topped with "taco meat" (meatless grounds with taco seasoning) and banana peppers, red onion and salsa (vegetarian taco salad).

    Salmon (pan fried in spray butter w/seasoning..walmart 4 oz 100 cal filet), steamed broccoli (spray butter w/seasoning) and container of Velveeta shells/cheese half the fat and if still hungry a side salad w/maple grove SF balsamic vinaigrette)

    Broiled kofta kebabs (http://allrecipes.com/Recipe/Kofta/) with peppers and onions, rile pilaf made with brown rice and whole wheat vermicelli, salad dressed with olive oil, lemon juice, salt and mint leaves. And I have loads of leftovers for tomorrow!

    tonight is trying a new idea: quinoa chicken "fried rice" - with "fend for yourself" as backup if it turns out badly :laugh:

    It's my boyfriend's birthday, so I'm making baked salmon with cajun seasoning (one of his favorites), whole wheat couscous, and steamed snap peas. He loves chocolate chip cookies, but instead of baking a giant batch that we'll both feel guilty about later, I found a recipe online that makes less than a dozen.

    Having a processed, high sodium veggie burger because I don' have time to bake my tofu tonight. BUT that's okay.

    Brown rice cooked risotto style
    Veggie stir fry (carrots, peppers, pak choi, onions and fresh chili) mixed with chili spiced ground beef.

    I must say, it was delicious and gave me 3 portions for further meals during the week :happy:
