My diary says it's meant to be potato-cheese soup with broccoli and cauliflower, but it's too early in the morning for me to commit.

It's my boyfriend's birthday, so I'm making baked salmon with cajun seasoning (one of his favorites), whole wheat couscous, and steamed snap peas. He loves chocolate chip cookies, but instead of baking a giant batch that we'll both feel guilty about later, I found a recipe online that makes less than a dozen.

Having a processed, high sodium veggie burger because I don' have time to bake my tofu tonight. BUT that's okay.

Side of sweet potato ( plain with cinnamon)

Side of roasted squash (no oil, pepper only)

    :P

    Brown rice cooked risotto style
Veggie stir fry (carrots, peppers, pak choi, onions and fresh chili) mixed with chili spiced ground beef.

I must say, it was delicious and gave me 3 portions for further meals during the week
