    Homemade black eyed peas (cooked with crushed tomatoes, onion, garlic, carrots, and salt and pepper) reheated with chopped fresh spinach, halved cherry tomatoes, mushrooms, raisins, pepita seeds, and parm cheese. Side of Armenian cucumber slices.

    black eyed peas! I'm heading to the store. Ah, if I could only make them like my mother, a Southerner.

    oven baked salmon fillet with salad and boiled salad potatoes with light mayo followed by a non fat, strawberry, Greek yogurt. And yes. I'm going to enjoy it but YES I could do it with a steak on the side or some creamy mashed spuds. However I really am trying this time and I already had I whoops did I really just eat that!? day yesterday.

    Whatever everyone else is having I hope they thoroughly enjoy it :drinker:

    This is from a few nights ago - Lemon Basil Grilled Chicken Pasta (Pioneer Woman recipe) with asparagus. Also got to use some of the basil that is going crazy in my garden right now!

    That looks really good. I will have to remember to use some of the basil growing in my garden. A friend of mine gave me a few cups with cilantro growing in them. After I transplanted them, the cilantro died, but basil came up in it's place.

    I never have good luck with cilantro - I don't understand it. Everyone says it is too hot here (Missouri) to grow it, but that makes no sense since I am pretty sure it grows well in Mexico....

    Larro - your garden must be a sight to behold. I am always amazed at how many of your creations come straight from your garden. We just have herbs, jalapenos, and some tomato plants that aren't producing at all this year. One of these years I am going to step up to other vegetables...

    My son adores the Quiznos Honey Mustard Chicken with bacon and onions.... well we no longer have a Quiznos near us, and I am in the mood for something different, so that is what's for dinner tonight (with my own twists of course :wink: )

    sautéed eggplant, broccoli slaw, shrooms, tomatoes over brown rice. Maybe an egg if I feel like making one. I'm pooped.

    A ham, turkey and chicken sandwich with Pepper Jack, cucumber, tomato and onion. Also had corn, stir-fry, carrot and cucumber. I'm stuffed now, but I will have some of the low sugar desserts when I get home from work in a couple of hours.

    Ezekiel sprouted corn tortillas
    Pan seared fresh grouper
    Thin sliced red cabbage
    Homemade baja sauce (2/1 Greek yogurt/mayo, jalapeño, lime, cilantro, and kitchen sink of spices)
    Avocado
    Lime on top

    BLT sandwich on toast with all fresh veggies.Big bowl of fresh sliced cukes & onions in vinegar/sugar.
    All was good. just had my snack/ dessert of cold milk & dry cereal.

    Tomorrow is ham & bean soup with salad of fresh greens,tomatoes & the cukes.

    Felt like breakfast for dinner tonight. Old fashioned oats with walnuts, raisins, cinnamon, 1tsp brown sugar, milk, 1tsp butter. Whole wheat English muffin with 1 tbs peanut butter. Cantaloupe.

    My meals have been quite simple lately. Today, I had steamed Okinawan purple sweet potato topped with walnuts. Nothing fancy but it did look very pretty and tasted great. :D

    We had cauliflower crust pizza tonight topped with sauteed mushrooms, onions and yellow bell peppers, plus baby spinach leaves, sliced tomatoes and mini pepperoni. Dee - li - cious! Hubby loved it. There are lots of cauliflower pizza crust recipes out there. I used this one and would make it again for sure: http://www.theluckypennyblog.com/2013/02/the-best-cauliflower-crust-pizza.html We had this with a sliced up gala apple. MMmmm...

    It's hot here today so not in the mood to cook... Went with a Deli turkey, cucumber, fresh garden lettuce, feta cheese and dried cranberry wrap and a blueberry banana smoothie.

    We were supposed to have a pretty casual meal of grilled chicken sandwiches, tater tots and corn but some neighbors came over and we combined our menus. My sandwiches and tater tots didn't get much attention compared to their Tbone steak, lemon pepper salmon, caprese salad and french bread! Oh and Breyers Reeses Blast ice cream for dessert!
