    How big a bag of corn do you use? My husband got 16 oz and I'm thinking this was too much? I entered it into my recipe box and got 320 calories a serving (when it's set at 6 servings per recipe). Hmmmmm. Smells good though!

    I would love to make some burritos for the freezer with this chicken recipe. I have never frozen anything with cream cheese it it before. I wonder if the consistency or taste would be affected after defrosting. Anybody have any idea on that?

    I made this this evening. It was totally yummy. I did have a few alterations. We only have tesco's by us and i get to go to asda occasionaly so some things we just couldn't get.

    800g chicken breast.
    1/2 jar old el paso salsa (i used mild but i think hot would have added more flavour)
    300g frozen sweetcorn
    I used a tin of chopped tomatoes instead of the Rotel tomatoes with green chilli's
    Mixed mexican beans instead of black beans
    2 small onions
    1 tsp of red chilli's
    1 tsp cumin (could probably have done with a bit more of the chilli's and the cumin)
    6 triangles of laughing cow.

    Serves 6
    Per Serving: cals 279 carbs 19 fat 4 protein40 sodium 331

    I think it depends on how you're eating it. I measured out 7 cups in the recipe once it was one. We ate it with taco-sized tortillas and barely fit 1/4 cup in each tortilla. We decided 2 tacos was 1 serving, so for us it made 14 servings at 137 cals (plus the 2 tortillas for a total of 207). I'd really like to know how the OP got the calorie count so low for only 6 servings. If we'd called it only 6 servings it would have been 320 cals a serving.

    Oh wow!!! This sounds yummy. We love Mex food. I am always looking for heat when I diet. Why is that? Maybe I'm weird.

    Ok, wish me luck! I had to do an alteration with meat-only had two chicken breasts in the freezer, but had recently cut up and froze sections of a big pork loin. So I have the chicken, and the pork loin in the crockpot with almost all of the ingredients (husband has to stop and pick up a bag of corn...running low on stuff till grocery time) I'm thinking the pork loin will be good...isn't there a dish with pork, and mexican ingredients anyway? I can't seem to remember the name though.
