This is my personal favorite my mom made for us growing up.
Slow Cooker Split Pea Soup
1 (16 oz) package dried green split peas, rinsed
1 meaty hambone, 2 ham hocks, or 2 cups diced ham
2 carrots, peeled and sliced
1 medium onion, chopped
3 large cloves garlic, diced
2 bay leaves
¼ cup fresh parsley or 2 tsp dried parsley flakes
1 tsp kosher salt
½ tsp fresh ground pepper
3 cups reduced sodium chicken broth
3 cups hot water
Layer ingredients in slow cooker in the order given. Do not stir. Cover and cook on low for 10 hours until peas are very soft and ham falls of the bone. Remove bones and bay leaves and stir after 9 hours.
Freezes well.
Serves 6.

Easy Chicken Curry
Serves 4 - 8
8 Chicken thighs (skinned and bones removed)
1 large white onion
2 sweet potatoes
2 tins of chopped tomatos
Curry powder
2 tbs of mango chutney
2 crushed garlic cloves
Salt and pepper
Peel and chop the sweet potatos into 1" cubes and add to boiling water for 5 minutes
Drain potatos and leave to one side
Seal the chicken in a non stick frying pan without oil and add the chopped onion and crushed garlic
Add the chicken, garlic, onion and potato to the slow cooker (or large saucepan)
Stir in both tins of tomatos, mango chutney and curry powder
Leave and cook on low for 8 hours
*Tip - add as much or as little curry powder as you like to taste
try adding different vegetables like peppers, mushrooms or even spinage

Creamy Ranch Pork Chops
1.5 pounds of pork chops (I got a pack of 8 boneless chops that came to about 1.5 lbs)
1 can of Cream of Chicken Soup
1 packet of dry Ranch Dressing mix
Lay the pork chops in a greased slow cooker, spread the can of soup on top.
Sprinkle the dressing mix over the top of the soup.
Put lid on slow cooker.
Cook on High for 4 hours or Low for 6 hours.
If you get a pack of 8 pork chops weighing a total of roughly 1.5 pounds, it comes to only 213.5 calories per pork chop.0
