Ni anago don. Simmered conger eel on rice. Sides were edamame, salad, fresh bluefin tuna and salmon sashimi. Finally ended things with the best black sesame cream mochi I've ever had... so far!0

Fresh caught Gulf mangrove snapper. Fish just taste better when you catch it yourself, perhaps that's the taste satisfaction.

Made a modern version of a traditional Asian favourite - Sambal Petai for dinner. It's so spicy I had to check that I had not grown hair on my chest. LOL.

One of my favorite lunches! Chicken wrap with sour cream, pepper jack cheese and homemade corn salsa. So filling and satisfying.

Had a tuna sandwich tonight (tuna, mayo, tomato, dill pickle, dill weed, english cucumber, mini portobello mushroom, red bell pepper, onion, garlic, garlic salt and black pepper); Sun Chips; and berries.

Not to be picky but that's actually a Croque Madame.
It's usually just a toasted sandwich with ham and cheese (Comté or Gruyere, this one looks like gruyere) and sometimes Bechamel sauce. That's a Croque Monsieur. The Croque Madame has a fried egg on top.0 -

correct, I mislabeled it
As for the recipe I'm afraid I didn't really measure anything out, besides the bechamel. Bechamel was 25g of good unsalted butter and 25g of AP flour. 1 cup of warm whole milk.
melt butter on low, add in flour and stir and cook until it is a golden color, add in milk and whisk until thickened
actual sandwich had ham, gruyere, a smidge of dijon, which was toasted then it was finished with a covering of the sauce and then more cheese, then a blow torch to finish it0 -
