    I love using my crockpot! I probably use it twice a week (usually just on weekends when I'm home).



    Chicken Enchilada soup is a close second. We use chopped zucchini in place of beans.

    I am going to try this with yellow squash instead of the beans. Thanks for the idea!.

    Quickly glanced through and didn't see this recipe posted yet, so:

    Crockput Honey Sesame Chicken

    I just made this today and it's so good! Pretty quick for crockpot, too, since it's cooked for 4 hours total at low heat. My boyfriend, who is pretty picky (doesn't like soy sauce, garlic, ketchup, or dark meat, all of which are in this recipe in some amount), ended up getting seconds.

    It's my first time using a crockpot and I'm pretty in love, definitely going to look through this thread in more detail for more ideas :)

    This is the one I am making now for this week:

    Slow Cooker Chicken Taco Soup

    "You can call this soup or chili, but either way it is wonderful! This recipe is also very adaptable to your personal taste. Serve topped with shredded Cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if you like. I hope you enjoy!"

    • COOK 7 hrs
    • READY IN 7 hrs 15 mins


    Original recipe makes 8 Servings
    • 1 onion, chopped
    • 1 (16 ounce) can chili beans (I USE KIDNEY BEANS AS WELL)
    • 1 (15 ounce) can black beans
    • 1 (15 ounce) can whole kernel corn, drained
    • 1 (8 ounce) can tomato sauce
    • 1 (12 fluid ounce) can or bottle beer ( I NEVER HAVE BEER< I JUST USE CHICKEN STOCK)
    • 2 (10 ounce) cans diced tomatoes with green chilies, undrained
    • 1 (1.25 ounce) package taco seasoning
    • 3 whole skinless, boneless chicken breasts
    • shredded Cheddar cheese(optional)
    • sour cream (optional)
    • crushed tortilla chips(optional)

    Directions
    1. Place the onion, chili beans, black beans, corn, tomato sauce, beer, and diced tomatoes in a slow cooker. Add taco seasoning, and stir to blend. Lay chicken breasts on top of the mixture, pressing down slightly until just covered by the other ingredients. Set slow cooker for low heat, cover, and cook for 5 hours.
    2. Remove chicken breasts from the soup, and allow to cool long enough to be handled. Stir the shredded chicken back into the soup, and continue cooking for 2 hours. Serve topped with shredded Cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if desired.

    White Bean and Ground Turkey Slow Cooker Chipotle Chili

    This is a Weight Watchers Recipe.

    Prep time: 18 min
    Cook time: 250 min
    Other time: 0 min
    Serves: 8

    This slightly spiced white chili is the perfect freezer staple to have on hand for too-busy-to-cook-nights.
    Ingredients
    1 spray(s) cooking spray
    2 pound(s) uncooked ground turkey breast
    1 large uncooked onion(s), chopped
    2 clove(s) (medium) garlic clove(s), chopped
    32 oz fat free chicken broth
    1 tsp cumin seeds
    1 tsp dried oregano
    1 tsp chili powder, chipotle variety ( I JUST USE CHIPLOTE and CHILI POWDER I NEVER A COMBO)
    30 oz canned white beans, rinsed and drained
    3 Tbsp fresh lime juice
    1/4 cup(s) cilantro, fresh, coarsely chopped, plus extra for garnish

    Instructions

    Coat a large skillet with cooking spray. Cook ground turkey, onion and garlic over medium-high heat until turkey is browned, about 10 minutes; drain off fat.

    Add turkey mixture and remaining ingredients to a 3 1/2 quart or larger slow cooker. Cover and cook on low heat setting for at least 4 hours. Yields about 1 cup per serving.

    Can freeze leftovers: Note: If the chili is too thick after it’s been frozen and then defrosted, add extra broth and then reheat to achieve desired consistency.)

    Chili-Mac

    This is also a Weight Watchers Recipe

    Cook time: 25 min
    Other time: 0 min
    Serves: 8


    1 spray(s) cooking spray
    10 2/3 oz uncooked 95% lean ground beef
    2 medium uncooked onion(s), chopped
    29 oz canned stewed tomatoes, Mexican-style
    2 1/2 cup(s) canned tomato juice
    4 oz canned green chili peppers, diced, drained
    2 tsp chili powder
    1 1/2 serving(s) uncooked macaroni, elbow
    31 oz canned pinto beans, drained and rinsed
    1/4 cup(s) low fat shredded cheddar cheese

    Instructions

    Coat a crock pot with cooking spray. Cook ground beef and onion over medium-high heat until meat is browned, about 10 minutes; drain off fat.

    Add to crock pot the stewed tomatoes including juice, tomato juice, chili peppers and chili powder. Add the ground beef and beans.

    Cook on low for about 3 hours. Add macaroni, elbow noodles and cook for another hour or until the noodles are tender and ready to eat.

    Spoon chili into bowls and sprinkle with cheese.

    Chicken & Dumplings
    4 Boneless, Skinless Chicken Breast
    1 can Fat Free Cream of Chicken Soup
    6 biscuits (Pillsbury Golden Homestyle Buttermilk canned biscuits -2pt per biscuit)
    2 cups of water
    1 Tablespoon bouillon, any flavor
    Cut the chicken into bite sized pieces. Add all of the ingredients except for the biscuits and cook on low for 5-6 hours. Add salt, pepper and any other seasonings that you would like. In the last 30 minutes of cooking turn, your crock-pot on high and tear biscuits into 1 inch pieces and add to slow cooker.

    Makes six 3/4 cup servings at 5 WW pts per serving.

    Beef Stroganoff
    1 lb very lean ground beef
    1 small chopped onion
    1/2 teaspoon garlic powder
    1/2 teaspoon salt
    1/4 teaspoon black pepper
    1 package of brown gravy mix
    8 oz sliced fresh mushrooms
    1 can Fat Free Cream of Mushroom soup
    1 1/4 cup of water, divided
    1 cup Fat Free sour cream
    12 oz whole wheat yolk free egg noodles, cooked

    Brown ground beef. Add salt, pepper, garlic powder, brown gravy mix and 1/4 cup of water. Stir well to mix. Pour ground beef mixture into crock-pot. Add onions, mushrooms, soup and remaining 1 cup of water. Stir to mix. Cook on low for 6-8 hours. Just before serving add sour cream and stir. Allow to heat through and serve over hot egg noodles. (I like to mix the egg noodles into the crock-pot mixture before serving.)

    Make six servings at 7 WW pts per serving.

    Sweet & Sour Chicken
    1 lb boneless, skinless chicken breast
    5 oz LaChoy Sweet & Sour sauce
    1/4 teaspoon garlic powder
    1/4 teaspoon onion powder
    8 oz pineapple chunks in juice, drained (reserve 1/4 cup juice)
    1 tablespoons brown sugar
    16 oz bag of frozen stir-fry vegetables

    Cut the raw chicken breast into bite sized pieces. Spray your crock-pot with cooking spray. Add chicken, garlic powder and onion powder; stir. Stir in sweet and sour sauce, pineapple chunks, brown sugar and the 1/4 cup of pineapple juice. Cover and cook on low for 6-7 hours. Add frozen vegetables during the last 30 minutes of cooking and cook on high.

    Makes four servings at 5 WW pts per serving.

    Apple Pie
    8 apples, peeled and sliced
    1 1/4 teaspoon cinnamon
    1/4 teaspoon allspice
    1/4 teaspoon nutmeg
    3/4 cup skim milk
    2 tablespoons Brummel and Brown Spread, softened
    3/4 cup Splenda
    1/2 cup egg substitute
    1 teaspoon vanilla extract
    1 1/2 cup Reduced Fat Bisquick
    1/3 cup brown sugar
    3 tablespoons of cold butter
    Spray your crock-pot with cooking spray Toss apples in large bowl with cinnamon, allspice and nutmeg. Pour into crock-pot. Combine milk, softened butter spread, Splenda, eggs, vanilla and 1/2 cup Bisquick. Spoon over. Combine the 1 cup of bisquick and brown sugar. Cut in the cold butter until the mixture is crumbly. Sprinkle this mixture over top of apple mixture. Cover and cook on low for 6-7 hours or until apples are soft.

    just made a huge batch of spicy chili.
    2 lb lean ground beef
    4-5 cans fire roasted tomatoes
    2 cans kidney beans
    1 can tomato paste
    4 cloves garlic
    1 large white onion
    2 c beef stock
    3-4 T chili powder
    1 T cumin
    1 t 100% pain hot sauce
    1/2 bottle chipotle hot sauce
    2 T smoked habanero pepper puree
    salt and black pepper

    I love my pork or beef salsa stuff. a pork shoulder roast put on top of onions add as much Rotels jalapenos, habanero's mild greens chilis whatever. cook for 6 hrs pull apart and you have burrito meat, pulled pork sandwiches, Cuban style pork over rice etc etc. yum yum yum.

    slow cooker southwestern 2 bean chicken
    makes 10 cups
    4 raw. boneless, skinless chicken breasts
    1 (15 oz ) can pinto beans (rinse and drain)
    1 (15oz) can black beand
    1 (28 oz) can diced tomatoes in juice low sodium is best
    1 pou d frozen and thawed organic corn (organic to avoid GMO corn)
    1 (12oz) jar of your favourite salss, no sugar added
    1/4 cup dicedgreen onion
    1/4 cup diced cilantro
    place breastson the bottom of your slow cooker. pour the tomatoes and salsa over that and then layer on the beans, corn, onion and cilantro.
    cook on low for 5-7 hourz or until the chicken easily falls apart when the pot is stirred
    i top mine with 2 tsp of plain greek yogurt and a little bit of shredded medium cheese.

    White bean Chili - comes out almost white!
    I don't have exact measurements for everything because I make it slightly different each time but you get the idea.

    3lb ground turkey
    1 large red pepper
    1 medium onion
    minced garlic
    2 small zucchini
    2 yellow squash
    1/2 bag of frozen corn
    1 can chickpeas
    1 can cannellini beans (or any other white beans you like)
    1 small can verde sauce
    1-2 packet guacamole mix depending on your taste

    I cut my veggies large so they don't break down into mush while cooking. Throw everything in the crock pot and let it cook til done. Add a little sour cream/greek yogurt in your bowl before serving to make it even brighter white and give it some creaminess. I serve it with jalapeno corn bread on the side. If you want pink chili for an event add a can of roasted tomatoes ;) Did it on accident one time.
