I made this last night it was so good. It made like 12 cups of chili so it was a lot. We had it last night and will have it tonight too. I'll just eat it on the stove.
Turkey Chili
Ground turkey 20 oz.
1 big 24 oz (I think that is what it is) can of crushed tomatoes
15 oz can of black beans
15 oz can of red beans/kidney beans
15 oz can of corn drained
1 package of taco seasoning
1tbsp of emerils essense
1tbsp of cumin
1tsp of paprika
almost 3 cups of water. I just added til I got a good consistency because I hate for my chili to be too thick
I cooked on high from about 12 to 6 pm. I served it with white rice I made in the rice cooker.
You can add cheese, green onion, cilantro or red onion to the top to serve.
I have quite a few recipes, but I love making salsa chicken and it is so easy. Just put a cup or so of salsa on top of chicken breasts in the crockpot. Put the crockpot on low and cook 6 to 8 hours. Yummy!

1 large chopped onion
2 cubes of chicken bullion
fill with water
boil for 5 hours
DELICIOUS!!!
I served it with glory seasoned green beans for under 350 calories!
I just made a very quick meal from what I had in the cupboard/freezer
I found I had chicken breasts, chili beans, and rice, so I put the chicken and beans in and filled the chili can up with water, let that cook on high (my chicken was frozen for 4 hours, then added the rice and let it cook for another hour or so. It turned out fantastic! Thats what my favorite thing about my crockpot is, I can toss it in and forget about it, and it's so easy to through things together.

Ham & Potatoes Au Grautin
2 cups of diced extra-lean ham
4 cups of diced raw potatoes
1 cup of chopped onions
3/4 cup shredded reduced fat cheddar cheese
1 -10 3/4oz can of Healthy Request Cream of Celery Soup (I prefer to use cream of chicken)
1/8 teaspoon black pepper
1 teaspoon dried parsley flakes
1 teaspoon yellow mustard
Spray your crock-pot with butter flavored cooking spray. Combine ham, potatoes and onions. Sprinkle cheese evenly over top. In a small bowl, combine soup, pepper, parsley and mustard. Add soup mixture to potato mixture. Mix well to combine. Cover and cook on low for 8 hours. Mix well before serving.
Makes six 1-cup servings at 3 WW pts per serving.
Chicken & Dumplings
4 Boneless, Skinless Chicken Breast
1 can Fat Free Cream of Chicken Soup
6 biscuits (Pillsbury Golden Homestyle Buttermilk canned biscuits -2pt per biscuit)
2 cups of water
1 Tablespoon bouillon, any flavor
Cut the chicken into bite sized pieces. Add all of the ingredients except for the biscuits and cook on low for 5-6 hours. Add salt, pepper and any other seasonings that you would like. In the last 30 minutes of cooking turn, your crock-pot on high and tear biscuits into 1 inch pieces and add to slow cooker.
Makes six 3/4 cup servings at 5 WW pts per serving.
Beef Stroganoff
1 lb very lean ground beef
1 small chopped onion
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 package of brown gravy mix
8 oz sliced fresh mushrooms
1 can Fat Free Cream of Mushroom soup
1 1/4 cup of water, divided
1 cup Fat Free sour cream
12 oz whole wheat yolk free egg noodles, cooked
Brown ground beef. Add salt, pepper, garlic powder, brown gravy mix and 1/4 cup of water. Stir well to mix. Pour ground beef mixture into crock-pot. Add onions, mushrooms, soup and remaining 1 cup of water. Stir to mix. Cook on low for 6-8 hours. Just before serving add sour cream and stir. Allow to heat through and serve over hot egg noodles. (I like to mix the egg noodles into the crock-pot mixture before serving.)
Make six servings at 7 WW pts per serving.
Sweet & Sour Chicken
1 lb boneless, skinless chicken breast
5 oz LaChoy Sweet & Sour sauce
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
8 oz pineapple chunks in juice, drained (reserve 1/4 cup juice)
1 tablespoons brown sugar
16 oz bag of frozen stir-fry vegetables
Cut the raw chicken breast into bite sized pieces. Spray your crock-pot with cooking spray. Add chicken, garlic powder and onion powder; stir. Stir in sweet and sour sauce, pineapple chunks, brown sugar and the 1/4 cup of pineapple juice. Cover and cook on low for 6-7 hours. Add frozen vegetables during the last 30 minutes of cooking and cook on high.
Makes four servings at 5 WW pts per serving.

8 apples, peeled and sliced
1 1/4 teaspoon cinnamon
1/4 teaspoon allspice
1/4 teaspoon nutmeg
3/4 cup skim milk
2 tablespoons Brummel and Brown Spread, softened
3/4 cup Splenda
1/2 cup egg substitute
1 teaspoon vanilla extract
1 1/2 cup Reduced Fat Bisquick
1/3 cup brown sugar
3 tablespoons of cold butter
Spray your crock-pot with cooking spray Toss apples in large bowl with cinnamon, allspice and nutmeg. Pour into crock-pot. Combine milk, softened butter spread, Splenda, eggs, vanilla and 1/2 cup Bisquick. Spoon over. Combine the 1 cup of bisquick and brown sugar. Cut in the cold butter until the mixture is crumbly. Sprinkle this mixture over top of apple mixture. Cover and cook on low for 6-7 hours or until apples are soft.
I have a bok choy soup recipe that I have changed some. My kids call it "Yummy good for you soup"
1 leek, diced
sauted in 1 tsp butter (I have been known to skip this step and just add the chopped leak and a touch of EVOO to the crockpot)
add a clove of garlic (I always at least double the garlic because my familiy loves it!)
4 baby bok choy sliced
8 cups vegetable broth (I use 8 cups of water and vegetable bouillon to make the broth)
1 tsp marjoram
2 potatoes diced
2 carrots grated
Vermicelli 3 oz. (I tend to omit this because it nearly doubles the calories)
our family favorite. It even gets my husband to eat vegetables. I have read that yellow onion can be substituted for the leeks. (this makes the recipe cheaper and leeks aren't always easily available.)
The thing I love about a crock pot is you can just make stuff up.
I love orange chicken.
I took 4 chicken breasts and 1 jar of sugar free orange marmalade and threw it in the crock. Set it on 6.5 hrs. low, and then warm. When I came home from work tonight I had not only a hot meal for tonight, but lunch for tomorrow.
So simple.
