Thanks! This week I'm also replacing my chicken enchilada casserole with a diabetes-friendly king ranch chicken that he's actually looking forward to. I'm also looking into sugar-free bbq sauce for my homemade pulled pork If I can't find any, I may just have to try making my own sauce.
Next week I'm tackling another of his favorite foods-- Sweet and sour chicken.

All yours. Dulce de leche + caramel topping + crumbled speculoos biscuits. 850ish calories a serving. Enjoy!

Happy Thursday. I am ready for 2016 to be done. Tired of losing people this year. My girlfriend lost her dad just a few days before Christmas and he was only 56. We never know when our time will be, so love fiercely and often.
On a brighter note, I have signed up along with several of us to do the 2017 in 2017 challenge. I know with all of us on the team we will reach our goal. This will be one of the motivating factors in my getting back to exercise.
I love the "love fiercely and often" I am a true believer in living each day as if it is your last. No regrets!
Where is this 2017 challenge?

I am so in the habit of having seconds of dinner that I have to split my portion into 2. I eat half and then go back for the second half as my 'seconds'. If I put my portion on my plate all at once I feel like something is missing the rest of the night. It's so silly, but it's the only way I seem to be able to not over eat in the evening.7

Bohemian Rhapsody BBQ sauce. The guy handmakes it all and it is diabetic friendly, no sugar. It is tasty, if a bit pricey. You can google it. I use it myself.2 -

Thanks for the suggestion @crosbylee! I'll have to check it out. I don't have a huge food budget but considering how much bbq sauce we go through in a week, it could definitely be a worthwhile investment lol0 -

That's a great workaround I do that sometimes too, if I'm feeling really hungry. It's a mind trick, but a really useful one!2 -

It makes sense! Cooking and baking are my ways of showing love as well, whether I'm making a super special dessert or putting lots of effort into making a healthy meal that tastes great!4 -

Haha, I have those days XD Though it's a bit embarrassing when I'm at work and I have to call someone and be like, 'I know my break was only 20 minutes ago but I just downed 32 ounces of water and only have a 6 oz bladder so send someone out here, stat!'

Also, I wanted to report that we now have cake at my house! My dad finally admitted that he's pretty sure he's diabetic but added that he would hate to have to live without dessert for the rest of his life.
So, yesterday I made Flourless Applesauce Cake. My dad not only doesn't know it's flourless, he also doesn't realize it's sugar-free. He had two slices last night and asked me to pack him up some for his lunch today

Oh, and as for the cheesecake, it took me forever to get up the guts to bake cheesecake. Somehow it's one of the most intimidating desserts! A good friend who's an avid baker told me to just do a "starter" cheesecake with a pre-made Keebler crumb crust, cream cheese, eggs, sugar, and vanilla. And that once I saw how easy THAT one was, I'd be ready to make a "proper" cheesecake.
What I did discover, through a few fails, is that even when your cheesecake turns out totally hideous, all that cream cheese and sugar means that it will still taste amazing! Just don't take any pictures of it.6 -

Cheesecake is a huge favorite at my house. I'd like to eventually make a sugar-free one, but you may be onto something with the 'starter' cheesecake-- that seems a lot more doable.
I did try another new recipe yesterday though! I made spiced sweet potato and black bean quesadillas. They're delicious, but definitely a 'me' treat since my dad won't touch anything that hints at being vegetarian lol I'm also making myself some lentil and spinach soup after grocery shopping tomorrow!4 -

Haha. My husband is the same about a lot of vegetarian stuff! He'll eat them if he has to, but since they tend to be a lot of effort I tend to hog them for myself since I actually ENJOY them. Feels like all the effort is wasted when someone is begrudgingly eating it.
I've never attempted a sugar-free cheesecake, I'm a bit too particular when it comes to baked goods (they have to be GOOD, and I can always taste that icky sweetener aftertaste so I just don't bother baking with it) but I've read a good few recipes that do use sweeteners in place of sugar. But definitely try the starter cheesecake first, it totally boosted my confidence to try that tricky one pictured above (That was my first "fancy" cheesecake attempt).0 -
Right? My dad sees the amount of effort I put into making vegetarian stuff and feels bad that he doesn't want to try it, but I'd much rather that he leave them to me instead of eating food he doesn't appreciate.
I don't like artificial sweeteners either and I know that my dad can't stand even a hint of the aftertaste (that's one of the main things he's upset about with the idea of being diabetic). I'm hoping to find something to replace sugar in sweets like that, such as honey or fruit juice/sauce. It'll just take some experimenting, I think.
