Beans and legumes count for one serving per day... so 80 grams.

It's this recipe, tweaked! I used 500g of eggplant, 500g of zucchini, 250g mushrooms, along with the lentils and chickpeas. Ileft off the pinenuts (coz I didn't have any) and used parmesan (because I like it better). The baked yogurt over the top makes this awesome almost cheesey topping, it's really good!!

I literally bought the honeycrisp and kept them separate from my family's apples. They are the best.
And I had trouble with the protein yesterday as well. I'm so much more full with all these plant foods that it's hard to fit the other macros.1 -
I eat a LOT of veggies, and I was surprised how much 800g is! I did eat a lot of cabbage though, which doesn't weigh a lot and takes up a lot of space.

Doesn't the guidance sheet say that leafy greens should be a cereal bowl rather than weighted 80 grams? Not sure if that applies to cabbage or not. Also....whose cereal bowl, ha ha!0 -

Unfortunately I have passed on my honeycrisp love to my little boy! My daughter likes Granny Smiths which are my go to cooking apple. Speaking of which.....apple crisp would count for this, right?!1 -

Okay late to the party but I'm in. This should be a walk in the park for me.
So far today 922g consisting of watermelon, grapes, carrots, and hummus (chickpeas). There will be another ~300g for dinner made up of baby spinach, cucumber, red bell pepper, and beetroot.7 -

Whew. Yesterday was easy. Today was hard. Feel like I force fed myself more than I wanted. Again my protein is low and will have to eat more later.3 -

This had me rolling! God bless his heart. He really went about it in an odd way, but he really did do well.1 -
100g (est) mixed berries
305g cantaloupe
191g celery
99g cucumber
244g winter squash
73g tomatoes
14g onions
75g green soybeans
= 1103g approx.
(And 128g of ovo-lacto vegetarian protein - though there's a bit of overlap ).

145 g three bean salad
70 g peter piper pickled peppers
85 g broccoli
88 g carrots
100 g potato (yeah yeah yeah...it's not my starch because I had a damn dinner roll, plus it was under the carrots and broccoli which officially makes it veg)
100 g cinnamon apples
150 g blueberries
So I could have stopped there but I mis-tallied and thought I was 150 short so I added:
150 ml V8 (which counts as an 80 g serving)
75 g celery
30 g garlic stuffed olives
Enough citron vodka that I could call it a Bloody Mary, along with franks hot sauce and lime juice
70 g pink lady on the side
For a grand total of 1050 g of virtuous eatin'. Definitely feeling like a human compost bin, and the good news is I still have half that pile of food from this mornings picture waiting for me on my desk. Woot!
