Got some new vegetarian cookbooks loved this chickpea curry!@vegmebuff I got the recipe from a book called The Very Veggie Family Cookbook! It was super simple, just some onion and garlic, a can of coconut milk, a can of chopped tomatoes, a couple tablespoons of curry powder, a few spoonfuls

- Brown bread 2 serv,

Amazing vegan pizza with tater tots, tofu scramble, black beans, maple 'sausage', chipotle aioloi and scallions. Green tea frappe with s'mores bar. Nutty Cashew smoothie, protein bar. Red velvet and mango cheesecake bubble waffles.

I've been on a "green goop" kick for the last couple of weeks, making dishes with sofrito, chimichurri, Italian salsa verde, and last night, Mexican tomatillo-based salsa verde.
Tonight, using yesterday's leftover batch of salsa verde: lemon-salsa verde marinated grilled (BBQ) chicken breast with salsa verde garnish topped with shredded cheese (microwaved to melt), grilled assorted veggies (mostly onions and multicolored peppers), side of black bean-corn salad. MFP tells me this plate is about 827 cals, 99g protein, 26g fat, 15g fiber, 54g carb. I'm on a 2000 cal/day plan, losing 20 lbs since New Years.
You can see the salsa verde peeking out from underneath the cheese. Like many things, this batch of salsa tasted better today than yesterday.

Another delicious vegan pizza: herbed potato cream, tofu scramble, arugula, oven dried tomatoes, asparagus, cashew cream hollandaise, chives. Tumeric black pepper ice cream, blackberry activated charcoal kombucha. Carrot cake and lavender blueberry cream puffs.
