Dinner out at Jones and Sons. Smoked iberico carpaccio followed by roast artichokes with cavola nero, jersey royals, toasted buckwheat and a side of chicory salad.

polenta rounds with chickpeas, bell pepper, brussels sprouts, roasted cauliflower and tahini dressing. cauliflower and tahini are two of my favs8 -

I usually eat 500-600kcal dinners and usually cook everything from scratch and don't buy ready-made products. Cooking takes about 30 minutes max unless I make soups or casseroles for several days. Here are some examples:
Kebab with sumak and berbere rice, and a few veggies
lentis with tomato and spinach and halloumi, in basalmico vinegar caramelised onions and pumpkin seeds.
Breaded fish (ok, this is readymade) with humus, sweat potatoes and roast veggies. This and variations of it are my I don't feel like cooking dinner as I just whack everything in an oven dish
Mango chicken curry in korma sauce, with rice
Biksemad. Pan roast potatoes with bacon and leftover veggies
Not sure if this is a chili con karne with an Iranian twist or a deconstructed kebab.
Teriyaki Salmon
Soup with lamb meatballs, northern African spices, chickpeas and lentils
crispy pork mince with garlic, sesame, fermented beans
Soup with sauerkraut, butterbeans, bacon and potatoes, and flat breads
Chicken casserole for several days, served with rice
Pasta with wild boar salami, wild garlic, parmiggiano and tomato sauce
Scrambled egg with sweat potato, sambal, coconut and various spices with sate sauce. I'd bought a mortar and pestle and really made everything from scratch, including grinding the peanuts. This one took ages, but I had enough sate for 5 dinners. This one was planned to be a tortilla of sorts
Simple misosoup
Salad with lentils, chickpeas, red beets and halloumi (for several days)
Light fish and coconut curry (used skyr and a bit of coconut flakes instead of coconut milk)
Kebab spiced chicken with tsatsiki (for two days), tomato salsa and tortilla wraps

Here's what I've been up to:
Chicken shwarma bowl from skinnytaste.com (a new family favorite)
Skirt steak with chopped salad and salt and vinegar potatoes.

Grilled paprika shrimp, peppers, and onions with soft polenta.

Ultimate volume meal. Two large sausage links with beans, onions and sofrito marinade with a side of yellow cauli rice, cabbage and a tostada with a tablespoon of guacamole and salsa. 600 cals

Today's lunch: Thai Chicken Peanut Lettuce Taco, 2 stuffed mushrooms, celery seed cole slaw, and assorted fresh & pickled vegetables. Total calories: 262

Loved this banana cacao bowl. Cacao, mesquite, maca, 5 mushroom blend, nut milk, banana, granola, fruit, hemp seeds and more cacao. They ran out of hazelnuts, so the girl gave me almond butter instead, which was a brilliant substitution.
