last night I made biscuits and gravy and scrambled eggs lol. I don't really care for it but I needed something quick and easy. I also ate my toddlers leftover rice and beans from a mexican restaurant the night before and ate that with my eggs. refried beans with eggs is really yummy.3

Not counting my regular breakfast, I made Creamy Fontina-Mushroom pasta as a treat for my mom. The last time I made it was over a year ago. It says 4 portions, but we are getting about 8.
Also smoked a pork butt. Had those leftovers for lunch today.1 -
Chicken tetrazini ( low crab spaghetti noodles) with oven baked parmesan broccoli, carrots & snap peas.

I made a bowl of mustard greens and black beans, a bowl of steamed mushrooms with garlic and herbs, plus a mandarin orange.1

Tried out the cauli + almond meal + almond flour mash with garlic brown butter. Pan tossed spicy green beans. Faux fish cakes with more crunch vs a soft center - a little flatter than what many would recognise .

If so, I made an apple pecan salad.
Handful of any greens, 1 TBS of blue cheese, 1-2 TBS of roasted pecans, 1TBS of dried cranberries, 1 gala apple, 2TBS of pomegranate vinaigrette. You can also add chicken, if you'd like.1 -

Yesterday I made a crockpot corned beef with salt potatoes and sautéed cabbage and onions.2

I meal prepped last night for the week! I made a turkey/veggie loaded chili in hopes to get more veggie intake/lean protein. It had the following:
Lean turkey
Onion
Garlic
Carrots
Yellow squash
Green bell pepper
Red bell pepper
Black beans
Red kidney beans
Corn
Tomato Sauce
Diced Tomatoes
All sorts of delicious spices including chili powder, cumin, coriander, adobo.
I'm looking forward to three lunches this week being healthy and filling!

We had a colleague and his family over for dinner. I did family style (roll your own) Vietnamese summer rolls with grilled pork medallion, roast duck breast and poached prawns all sliced thin. For dipping sauces we supplied peanut satay, nuoc cham, and hoisin thinned with soy.

Dessert was creme caramel cooked in the microwave the night before on the lowest setting for 40 minutes because life is too short for cooking anything au bain marie.1 -
