For lunch I have 1/2 a roasted acorn squash with garlic, butter, salt, and parmesian cheese with a 5oz piece of baked salmon mixed in. Doesn't look great, but it is so delicious! 522 calories, 26 carb, 36 protein1

Made some English Muffins, added a homemade TVP burger from the freezer, usual burger stuff, a quick coleslaw and a bit of salad. Under 500 cals and really hit the ‘comfort’ spot!1

Braised venison shanks and sweet potato. Very rich and great flavor, but I only found it eh. Husband loved it but I can’t get past the “goo” that the melted connective tissue turns into. However I’m EXTREMELY averse to meat fat of any kind so most of you probably wouldn’t even notice 3 3

Everytime I make Cambodian beef lok lak (every couple of months), I think "I forgot how good this is". I was in a rush to make dinner because an emergency at work meant I had to stay logged on until quite late, but even forgetting the khymer lime and pepper sauce and the fried egg on top it was really tasty. I don't miss the optional rice with this meal.

The fish looks delicious, but, do you eat the head and eyes? Curious minds want to know. My dad owned a cat fish restaurant and Georgia and we ate everything but the head! LOL0

Oh wow, this sounds like it would be a great gift (especially with a boozy icing like a rum-based one). Based on your description, I found this recipe. Is it close?
