@Peach1948 The black rice has a slight nutty flavor. We really like it. I cook it in a tiny Dash rice cooker using the proportion specified for long grain brown rice (1 cup rice to 1.5 cups water) and it is always perfectly done with nicely separated grains and not gummy.
I would agree with @o0Firekeeper0o in that it is closer to wild rice than brown or white rice. I use Hinode brand.2 -

Salad with homemade pickled carrots, cucumbers, mixed greens, raisins, Kalamata olives, Ken’s light Caesar dressing, topped with black forest ham and peanuts. A slice of espresso banana bread for dessert.

👩🏼🍳 My guy was craving pizza. So I used his Nonna’s recipe and made one. I wish I had more basil. 🤔

I slow cooked a leg of lamb today. I then warmed up a portion of the lamb with cumin, coriander, salt, pepper and sautéed onions (rings) to make a taco salad which also included romaine, tomato, avocado, sharp cheddar cheese, salsa & sour cream. Plus a serving of Beanitos black bean tortilla chips.

Lately have been eating toasted grain salads for lunch similar to the recipes at the bottom of this article. This one was toasted quinoa, rucola, shallots, tomato, olives and feta.

Breakfast time!
We took a lil drive to Vermont and came back with cheese and farmhouse sausage...
Made a vegetable frittata and added in some Vermont pimento cheddar and grilled the smoked sausage..

Copycat air fryer KFC from the Chicago Tribune recipe, sauteed spinach, tomato salad, smashed garlic potatoes also cooked in the air fryer under the chicken.

Yet another meal that ended up with basically nothing left Kielbasa and cabbage. My husband and I made it once YEARS ago, loved it, and promptly forgot it until very recently.5 -

Lamb, mashed potatoes with lamb gravy, oven roasted beets, salad of romaine, tomato & PK Caesar dressing. I infused the lamb juices with some with rosemary sprigs prior to making the gravy which gave it a nice flavor.

Linguine with Tomato, Garlic, Spinach & Butterbeans.5 -
Starter of salad with feta, candied nuts, toasted quinoa and vinaigrette. Main was anglo risotto with ham and peas. We have almost finished the Xmas leftovers in the freezer as we used up the last of the gammon from Xmas Eve and there is only a little stock left from the goose carcas from Xmas day. I will need to manage leftovers tomorrow with arancini or risotto stuffed mushroom caps. I can form and freeze arancini to pop into the air fryer on demand so maybe that is the best option.

🫑🥕🥬 Made a vat of vegetable pilaf.
The recipe changes based on what’s in the fridge... but it goes with almost anything. Added in some egg for protein and texture..👩🏼🍳

Oven baked chicken added to leftover mashed potatoes w/lamb gravy and oven roasted beets from last night plus a salad of romaine, feta, tomato, artichoke hearts, olives and PK Caesar dressing.

An air fried arancini made from last night's leftover risotto. The rest are in the freezer.
