    02/12 - 146.5 - OK, it's time to get serious about getting back down to maintenance weight. I pulled out the food scale this morning and I'm logging everything. After 3 years of daily weighing and losing/maintaining my weight, you would think I would have it down by now, but the reality is that without using the food diary and the food scale, I give myself too much leeway in the amount and what I eat. That works fine when I weigh 142 or 143, but not when I'm trying to lose several pounds.
    02/13 - 145.5 - I came home from work last night and my newly retired husband had made spinach lasagna and homemade garlic bread. I measured out enough to stay below maintenance calories, but I won't be surprised if the sodium and carbs hit tomorrow. Plenty of water today!
    02/14 - 144.5 - I don't trust this number, but I'll take it!
    02/15 - 146.5 - More carbs and sodium yesterday, so this is not a surprise. I'll probably leave the office a little early today to beat the winter storm heading our way. I hope everyone else stays safe over the next day.
    02/16 - 146 - The scale flashed between 145 and 146, so I'm keeping my fingers crossed for tomorrow.

    02/18 - 144.5 - There is a young man (and he is overweight) in my office who is a nice guy, but he is obnoxious when it comes to food. He knows that I, along with a couple others in my office try to watch what we eat. At least once a week he brings in cake, cookies, donuts, brownies, etc. That is fine except he walks over to me and waves the food in front of me and "jokingly" asks me if I want a piece. When I usually say no, he'll bug me about it throughout the day and he leaves it at the end of his desk where I pass by it 10 times a day. Yesterday, after 4 years of this, I reached my breaking point with brownies. After his 3rd try to get me to take one, I took a half piece of brownie. I ate one bite, and told him it wasn't worth the calories and wrapped the rest up and threw it in the trash. It felt kind of like a b**** move, but we will see if he keeps bugging me with sweets. I guess I'm getting old and grumpy.
    02/19 - 145 - As long as I keep trending downward, I'm OK with this weight.
    02/20 - 145 - Down .5 for the round. I'll take it!

    I have had a serious baking urge — more the baking than the eating — since this snowy period started, so yesterday I decided to bake a healthy-ish pumpkin crunch cake — extra egg, reduced sugar, added nuts. Not very seasonal, but I love the flavor & fragrance! Then I cut half into slices and took them to my two next-door neighbors. DH was happy to get dessert, and I enjoyed my half slice, and felt satisfied.
    ❤️ How rearranging even one piece of furniture can give a room a whole new feel.

    @Sheilaboneham You do know you simply MUST share the recipe now, right?

    1) Preheat oven to 350F. Lightly grease a 9x13 pan.

    2) Combine 1 can (15 oz) can pumpkin purée (just pumpkin, not pie filling) + 1 can evaporated milk (12 oz) + 3 large eggs + 1/2 c loosely packed brown sugar + 1.5 tsp cinnamon. (Original recipe called for double that of white sugar, but it doesn’t need it, and the brown sugar adds depth.) Pour into the greased pan.

    3) Combine 1 box cake mix evenly on top (I use spice cake, but white or yellow might work if you add more spices) + half cup nuts if desired. I use chopped pecans and I think they add play or as well as crunch, and a smidge of protein.

    4) Pour 1 cup melted butter over the cake mix.

    5) Bake 70 minutes. Let cool. Enjoy!

    Original recipe said 16 servings. I find even a half serving to be very satisfying.

    I have decided to start food shopping months in advance, so will most likely have to incorporate a higher carb content (as I eat a mostly vegan diet and have limited freezer real estate), it might be a bit rocky to start with weightwise but I have faith that I can adjust eventually!
