Tacos for lunch made from leftovers.

Even using store bought tortillas, sous vide duck pulled out of the freezer, pickles, hot sauce and boiled mung beans we had in the fridge, this meal is too much work for a weeknight. Duck tacos with feta, guac, pico de gallo, esquites, grilled pineapple and red onion salsa, refried beans, pickled red onion, mole sauce.

(Inauthentic, Americanized) Brazilian shrimp soup over rice. I’ve made it once before and liked a few aspects of my previous rendition more, so some hybridizing is needed!1 -
Wednesday dinner: Turkey spinach soup (mirepoix, bone broth, turkey, spinach, cauliflower rice, black garlic)
The steam fogged up my lens. Also, I had to use pre-packaged, shredded carrots in my mirepoix because the grocery store was completely out of whole carrots. 😑

Cantonese beef hor fun and cucumber salad with store bought Japanese goma dressing.

Thursday dinner:
2 chicken tacos: Grain free tortilla, shredded chicken (onion, ancho chili powder, cumin), avocado, salsa, lettuce, shredded cheese and a dollop of sour cream

Baja fish tacos with curtido and mostly leftover veggie condiments from duck tacos two nights ago.

Friday Dinner: Pie plate salad: romaine and red leaf lettuce, chicken, peas, 1/2 avocado, Queso Fresco crumbling cheese and salsa (picture taken before salsa was added)

Wholewheat Fusilli with Mushrooms, Balsamic Vinegar & Goat’s Cheese. This was a new recipe and I cannot recommend it highly enough. Minimal ingredients, made in the time it takes to cook the pasta and so, so tasty. Simple but tastes like the best pasta from a top restaurant! Link below the photo if you’re interested in trying it. Pancakes made from sourdough starter discard (my first time and they were good!) blueberries, and scrambled eggs.4 -
Pad thai and courgette namul.

Turkish salad of watermelon, feta, mint and pomegranate molasses to start. Main was crusted hake roasted in the air fryer on top of some potatoes.

Some firsts today.
Tried blue spirulina kombucha. I pretended it was a mocktail. ☺️
Made a seafood, seaweed & veggie poke bowl. (Raspberry, blueberry, strawberry-spinach juice on the side.)

Sunday Brunch: Spinach, onion, cheese omelet and sausage
Sunday Dinner: Sweet potato "rotini" (it actually looked more like French fries) with spaghetti meat sauce and peas

Starter of grilled watermelon, cherry tomat, feta and mint. Main of spaghetti alla vodka with a little green salad.

@LazyBlondeChef That was indeed a small fresh seedless watermelon the hubby picked up. So not good for food transport karma and green credentials.
Last night we had salad with feta and blueberries followed by herb crusted backed haddock which is not photogenic but plenty tasty. On the side roast potatoes some pickled watermelon rind and pickled daikon.

Inspired by finding a jar of lingonberry jelly, I made Swedish meatballs in gravy, small boiled and buttered potatoes, and a Swedish side of cucumbers in dill, vinegar and sugar. I found the recipes on a Swedish recipe site and followed them almost to a T, the only difference being I used ground turkey for calorie’s sake and baked them instead of frying because I didn’t have the time or patience for frying lol4 -
Pan fried sea bass on a bed of tinned butter beans warmed up in some seafood bisque we had in the freezer. Some not so authentic chimchurri/gremolata. Sichuan courgette salad on the side. This is a really quick veggie side for weeknights. I put the courgette in the salad spinner, pour a kettle full of boiling water over it. I keep a squeeze bottle of the dressing in the fridge. When the courgettes are cool enough to handle, strain off the water, spin dry in the salad spinner and toss on the dressing.

Happy Valentine's Day!! Hubby and I made steak, garlic butter shrimp, steamed asparagus and spinach salad.

Tacos are a good way to use up small quantities of lots of leftovers. I made grilled pineapple and grilled onion salsa and guacamole. The rest of dinner were bits and pieces lying around the fridge like leftovever shredded duck confit, leftover lentils and butter beans, leftover tomato and courgette salad, grated cheese and pickles I keep in stock.
