Miso soup w/seaweed, mushrooms & pork belly over soba noodles which aren't visible since they're covered.

Ricotta, Lemon, mint and basil Orzo, with peas and Broad Beans. I make this fairly often but today added Capers and Baby Spinach. So good!

Grocery store sushi for dinner bc I didn’t feel like cooking.4 -
I cooked at a girlfriend's this afternoon. She's a busy single mom who needed some home made ready meals in the freezer so we did a huge batch of Marcella Hazan's bolognese sauce as well as some sausage ragu typically served with gramigna in Bologna. In the evening, we used some of the bolognese sauce to make lasagna cupcakes served with a green salad.

First attempt at cheese souffle as a starter with some salad. Not perfect but not as tricky as I thought it would be. Followed by asparagus risotto.

Flounder topped with caper & artichoke heart butter sauce.

Monday brunch : old fashioned oats with 1/2 a chopped Honeycrisp apple (most of it is underneath), 1 Tbl of finely chopped walnuts, cinnamon and a drizzle of pure maple syrup
@LazyBlondeChef, I keep forgetting to respond to you. I love vintage kitchenware... don't get me started. I only have a few pieces of Fiestware - this light blue bowl is my favorite!6 -
Monday dinner (meatless Monday): Veggie rotini Alfredo (spinach and lentils) with peas and garlic toast

Not so authentic dutch meal. Bitterballen (=croquettes containing beef stew) to start but air fried instead of deep fried. Haring salade where the salted raw herring was replaced with smoked mackerel. Google it if you want a different take on potato salad than the typical American version.

Chicken, rice, and carrots.4 -
Tuesday brunch: Cheerios with bananas and blueberries

Did a little entertaining last evening, including a homemade veg pizza. Handmade crust and sauce. MFP recipe function computes this at about 249cal per slice (8 slices per pan), 11g fat, 28g carb, 11g protein.

Cantonese chicken with aspargus stir fry and Cambodian roasted baby corn with rice.

Tuesday dinner: garlic chicken tenders, roasted butternut squash and baby peas

Starter of dutch bitterballen (=croquettes filled with beef stew) and mustard warmed up in the air fryer from the freezer. Main of vegetarian hamburgers we had in the freezer. With all the trimmings of melted cheese, pickles, mayo, fried onion you hardly notice that the patty is not beef, to be honest.

American Wagyu beef patty, mashed white potatoes skin on, super sweet corn cob and sautéed french green beans.

Wednesday:
Breakfast on the left - cinnamon raisin English muffin with cream cheese and coffee;
