Mediterranean Quinoa

Recipe:
1 cup quinoa
2 cups water or vegetable broth
1/2 cup cherry tomatoes
1/2 cucumber
1/4 red onion
1/4 cup Kalamata olives
1/4 cup feta cheese
1/4 cup chickpeas
1 tbsp fresh parsley
1 tbsp fresh mint
2 tbsp extra virgin olive oil
1 tbsp lemon juice
1 tsp dried oregano
Salt and pepper to taste

    I think it looks FANTASTIC. sounds great, all but the olives which could very easily be left out. The rest are things I love individually and look good together!

    I have a chopped salad thats basically that with romaine lettuce.
    All of those ingredients are delicious together.
