Super Easy Crock Pot Meat
Ingredients:
4-6 Chicken Breasts (or pork tenderloin)
bag of baby carrots
20-30 small red or yellow potatoes
1 onion chopped (I like sweet or Vidalias)
1 green pepper chopped
1 package french onion soup mix
Directions:
1. Toss all ingredients into the crockpot and add enough water to cover meat (keep water level at least 1/4 inch from top to prevent overflow.)
2. Set crockpot on low.
3. Cook 6-8 hours on low or until meat is fully cooked.
4. Serve over brown rice.
You can also use a modified version of this to make pulled pork. Marinate the pork tenderloin overnight (or buy premarinated pork tenderloin.) Only add the pork tenderloin and the onion soup mix, plus two cups of water to the crockpot. Set the crockpot to low and cook 10-12 hours, flip meat halfway through (or as soon as you get home form work.) Check to make sure the pork is falling apart with a fork; if it isn't you need to let it cook a little longer. Drain water off the meat, pull the pork apart using forks and serve with your favorite BBQ sauce.0 -

Low Carb Crockpot Chicken Dijon
4 chicken breasts
3 Tbs olive oil (or any other)
2 cloves garlic minced
3 Tbs white wine
2 Tbs soy sauce
2 Tbs Dijon mustard
Heat oil in a skillet. Add minced garlic and cook 3 minutes, stirring often. Add chicken breasts and brown. In a separate bowl, combine wine, soy sauce and mustard and mix well. Pour generously over chicken. Put all in crockpot and cook for 6 hours on high.
When I made this it was a little dry, so I did the first half on high & then added some broth & continued to cook on low.0 -

Dijon Chicken Crockpot
•4 to 6 boneless chicken breast halves
•2 tablespoons dijon mustard
•1 can 98% fat-free cream of mushroom soup
•2 teaspoons cornstarch
•dash black pepper
Preparation:
Wash chicken and pat dry; place in slow cooker. Combine remaining ingredients and spoon over the chicken. Cover and cook on low 6 to 8 hours.

I made this today and it was OH.SO.GOOD!
Hassle-free Salsa Chipotle chicken
3 chicken breasts whole
Old El Paso hot salsa (650ml)
1/2 packet chipotle pepper Clubhouse Seasoning
5 pepperoncini peppers cut up
Cayenne pepper (optional)
Rub the seasoning all over the chicken and put on the bottom of the slow cooker. Dump the entire bottle of salsa over it. Cut up the peppers and put in. Add cayenne pepper if you like it hot. NO salt needed!
Keep on high for 4-5 hrs (mine got done in 4 hrs).
When its done cooking, tease the chicken out with a fork so that it shreds like fibres.This way the chicken will won't be all sauce on top and no taste underneath. No oil or butter needed! The whole thing is about 1000 calories and makes 5-6 serving or more!0 -

Surprise Thai Chicken Curry
I call it this because I put the ingredients in the crockpot hoping for the best and what came out what better tasting Thai chicken than I've had in Thai restaurants! And without coconut milk too! It goes very well with Jasmine rice or any other aromatic rice.
3 chicken breasts cut into small pieces
1 cup Stir fry vegetable blend
2 cups raw mushrooms
3 rosemary branches(?)
A handful of Basil leaves
1/2 of a large lemon cut up into round slices
7-8 cloves garlic and 1 tsp of ginger crushed
3-4 Thai green chillies (depending on how hot you want it to be)
3 cups chicken broth (with no added sodium)
3 tbsp whole wheat flour or any other flour...

Put all the ingredients except the flour into the crockpot and cook on high for 4-5 hours. If you see white stuff floating around like I did, use a strainer to get rid of it. The white stuff had a funny consistency... In a separate vessel mix the flour and some water to make a slightly watery paste and add this slowly to the crockpot stirring constantly. This is just to give it some thickness as a curry. (I don't use corn starch for this as it is higher in calories and the thickness never seems to last long enough.)
Total calories = 900
Makes about 6-7 servings!0 -
