    For breakfast:
    1 cup quinoa
    2 cups of vanilla unsweetened almond milk (or you could use skim, soy)
    Bring to boil. Reduce heat, put lid on pan and cook 15 minutes until almost all liquid absorbed.
    I then stir in 1/2 can of pumpkin, about 3 TBS brown sugar and cinnamon
    Your add on's are endless from here. I have done cranberries. Another time I added blueberries and strawberries. I am going to try apple next

    Gluten Free Garlic Quinoa Sweet Potato Patties Recipe

    1 cup cooked quinoa
    1 large sweet potato cooked, peeled & mashed
    1 egg
    1/2 cup grated Parmesan cheese
    1 cup gluten free bread crumbs (1/2 for mixture ½ for breading)
    1 medium red onion, finely chopped
    3 garlic cloves, finely chopped
    2 teaspoons Cajun spice
    1 tablespoons fresh thyme, finely chopped
    1 teaspoon paprika
    Salt and pepper to taste
    olive oil to pan fry

    Mix all ingredients (leave ½ cup breadcrumbs for breading) Form a patty from mixture and coat in remaining breadcrumbs, as thick as you can get it. Then drop the patty in a heated pan with olive oil. Cook until browned on both sides. You could also bake. If baking, use less breadcrumbs. Transfer cooked patties to paper towel. Cool for a few minutes.

    I usually leave off the breadcrumbs for breading and they are still awesome!

    My favorite Quinoa recipe from Dr. McDougal's recipes. I think you will be very pleased with this recipe, it should also give you a good launching point to create your own flavors. Such as Mexican Quinoa, Greek Quinoa etc....

    Serves 4
    Quinoa is paired with in‐season apples and sweet and pungent spices for an easy salad. You can use local
    heirloom apples or use what you can get. A great introduction to quinoa.

    1 cup diced onion
    1 cup quinoa, rinsed and drained [only if your brand is not already pre-washed]
    1‐2 teaspoons curry powder
    ½ teaspoon ground cumin
    ¼ teaspoon ground cardamom
    ½ cup broth or water
    2 apples (1 chopped, 1 reserved for later) [I sue only 1 apple]
    3 tablespoons dried tart cherries
    ¾ cup apple juice
    3 tablespoons toasted slivered almonds
    Chopped Italian parsley or cilantro, for garnish

    Add the onion to the 4 qt stock pot and sauté in a little water for a few minutes or until onion is soft; the water will evaporate.
    Add the quinoa and cook until toasty.
    Add the curry powder, cumin and cardamom and toast for 30 seconds.
    Add the broth, 1 chopped apple, cherries and apple juice.
    Cover and bring to boil over medium high heat.
    Lower the heat to maintain simmer soft boil for 15
    minutes.
    Shut off heat and let sit for 10 minutes.
    Chop the remaining apple.
    Remove the lid from the pot and fluff the quinoa, adding the reserved chopped apple and almonds.
    Taste and add salt and pepper, if desired. Garnish with chopped parsley or cilantro.
    Serve hot, warm, room temperature or chilled.

    cooked in water with "italian blend" seasonings then mixed with zuchinni tomatoes and bell peppers

    Cooked in chicken broth, then add a LOT of garlic powder and salt, or if you have fresh garlic green onions and salt it is even better.

    Bump! Quinoa is soooooo delish. A vegetarian restaurant in the next town makes a quinoa to "die for". I too have my first package and am watching this thread with interest!

    Add to 2 cups quinoa (after cooking)
    Finely chop 1 bunch of cilantro, 2 cups of spinach, 1/2 onion and 2-3 cloves of garlic
    Cube 3-4 roma tomatoes, 2 small avocados
    Combine everything and sprinkle with lime juice-- its good hot or cold too.

    I've also found (by mistake) that the chopped and cubed stuff is amazing on cooked portabello mushrooms.
