Fantastic fish tacos
So tonight I made some great keto friendly fish tacos. Cod seasoned liberally on both sides with my homemade taco seasoning, pan-fried in lard, then served with a great green cabbage slaw made with olive oil and acv, a dressing made with full-fat sour cream, guacamole and lime juice, and just a sprinkling of cheese. Super…

This is why...
I don't normally eat breakfast. I did, and now I am starving. Normally if I skip it, I can make it to 1 or 2 easy without being over hungry. I ate breakfast at 9am and now my belly is howling like a rabid wolf at 2:30pm, and I am in the car with nothing to eat. And breakfast was 550 calories of cheesy eggs, sausage and…

Mother's day dinner
Two 100g ground beef patties with 27g sharp white cheddar and 50g grilled bacon, liberally salted and just a couple lines of mustard. Dessert was 84g raspberries with 30ml of heavy cream that I whipped in about 40 seconds with my little milk foamer. Tasted quite decadent and I stayed within calories and macros.

First meal on my awesome grill
Even the asparagus was done in a grill basket. Note the lovely grill marks achieved while the steak within remained perfectly medium-rare (verging on rare in the center most potion, which is just fine by me). The fat was rich and melt in your mouth with that fantastic char broiled taste. It also produced juicy butterflies…

Tournament prepping
My son is playing in a 2 day lacrosse tournament 4 hrs from home this weekend. That means leaving the house at 7:15 tomorrow morning, arriving at the tourney around noon (time zone difference), then hanging out at the park all day with games at 1:30, 5:30 and 7:30pm. In addition to the usual easy pack-alongs (trail mix,…

Seasoning my cast iron grill grates
Bought a new grill Sunday, a tru-infrared with cast iron grill grates. In the end, it didn't quite fit in the back of my minivan, so it's being delivered tomorrow, but I came home with the grates and troughs. Since I didn't work tonight figured I'd get a head start and season the grates in my oven. So much conflicting info…

My ground beef experiment
Day 1 technically in the books, though my calories look awful since I work nights and ate my second patty at 1am. 286.2lbs (my new shameful high after getting down to 207 in late May last year) 275g 80/20 ground beef, seared outside, damn near raw inside, liberally salted 3 cups black coffee 10 cups water Like FIT_Goat I…

As seen on an MFP blog that popped up on my feed...
This easy one-skillet chicken dinner by Cooking Light could be ready in less than 40 minutes tonight. Fresh flavors of thyme, lemon and parsley highlight the wholesome ingredients — chicken, carrots and potatoes — featured in this dish. Serve with a side of whole-grain rice for a complete meal. This actually didn't look…

Raw vs cooked weight of meat
This is why I try to always use raw, for accuracy: The 490g of raw 80/20 ground beef I dropped in the pan is 1229 calories. The 383g of cooked, crumbled hamburger meat I dumped in a big bowl, including all the fat? Claims 1042 calories. 187 calories, gone like magic. I think not. If you are logging these things, use raw…

Official 1 week ground beef challenge weigh in
I am down 12.0 lbs from my starting weight on 4/12,from 286.2 to 284.2. My best guess is that 75% of that is water. I did go off the rails Saturday night but got right back on track Sunday, to my ground beef ways. It's challenging with my husband, who can eat all things in moderation and maintain a healthy bodyweight…

I know I am back on keto track
Because last night I had three (3!!!) leg cramps in the night. Mother picking hurt. Got up and took some mag and potassium and they are surprisingly not as sore as they should have been this morning. Note to self: watch supplements, mag in particular, my potassium is probably fine since I use lite salt in addition to…

Back to it
I regained a significant amount of weight since I fell off the wagon near the end of May. Three attempts at getting back to it failed. I am now 64hrs into a fast (literally only liquids since 12am Monday) which I am going to break in an hour with a half pound hamburger with cheese and mayo. I feel as if I am definitely…

One week back on the wagon...
and I am down 15lbs. Is a large portion of that water and bloat? Sure, but who cares? I feel better already, my pants fit noticeably looser (my jeans almost too much so, my scrubs nicely) and it was simple. I plan to eat fairly light the next few days, then approach Thanksgiving as I did (successfully) last year: dark meat…

WTF?!
Subway for lunch, didn't have a chance to check nutrition, got 12" steak and cheese in a bowl, with mayo and mustard. Just now looked at their website, there are 4 *kitten* carbs per 6" portion of their steak. It simply boggles my mind that I just blew 8 carbs on the meat. Absolutely ridiculous. I should have got the…

Ummmm beef
So excited. I have a 3lb chuck roast braising away after giving it a good hard sear (5 minutes per side). Salt, pepper, a little garlic, some dehydrated onion in the braising liquid. Smells like heaven

Oh to be a nearly 13yo boy...
My son, who will be 13 on the 29th of this month and measures in at a whopping 5' 9.5" and 104lbs, woke up at 8am, devoured nearly 500 calories of eggs, butter, cheese, turkey sausage and 2% milk, then went back to bed (after mostly successfully cleaning up after himself). I am sure he will wake up at 10am starving, lol

Cheeseburger pie review
My review of Cheeseburger pie: First off, I had to alter the proportions a little, because I had 22oz of ground beef, not 2 lbs. It still made a ton. 8 Ingredients 22.00 ounce, Beef - Ground, 80% lean meat / 20% fat, raw (hamburger) 1.50 tbsp, Dried Minced Onions 4.00 Tbs (30ml), Heavy Whipping Cream- Actual Carb Count…

VAP/LPP testing
I was looking to have one of these done, because my last lipid profile indicated my LDL (and total cholesterol) had shot up significantly after trending downward prior to that, and that my HDL refused to go any higher. But it's 129$!!! That is not in the budget right now.

Bloody Premium!!!
Apparently I got "blessed" with the option to upgrade to premium today. It broke my custom macros, $*&$*&(*&($)*&($)(*. Useless pile of crap. At least my pie chart and such are still working, but it adjusted my macros so now instead of 5/85/115, they are 0/87/116 (or 0/25/75 percentage-wise). If I set carbs to 5%, they pop…

Day one, Carnivore style (mostly)

Lipid panel update... sorta
So, I had my cholesterol checked 8/13/14 and the numbers weren't too "bad". (317lbs, down 58lbs) Total: 172.7 Trig: 95.36 LDL: 154.72 HDL: 33.02 The LDL/HDL was a little worrisome, but I was continuing to lose weight, and my Trig/HDL ratio was 2.89. Again, not bad but could be better. I had my cholesterol checked again on…

I am a special *kitten* snowflake (rant)
Since today, I weighed in still (still!) 1lb heavier than 4 (four!!!) weeks ago and 2.4 lbs higher than my last low weight (3/29), despite consuming on average 1280 calories per day and less than 8 carbs per day in that time frame. In that same time frame, I also averaged just over 10k steps per day (and no I am not hungry…

Prosciutto
Got like 2+ lbs of it today for about 4$ because some employee at Target had labeled it frozen turkey breast. The 3oz package of the same product (sliced) was 6.99$. Now to find awesome prosciutto recipes!

Ketone meter
For *kitten* and giggles, I ordered one of those monitors that does ketones (in addition to glucose, of course). One hour after eating a meal, I measured at 1.8mmol, easily within the keto range, which doesn't surprise me at all. The meal was an oddly (because I wasn't trying to do this) perfect meal, with 4.7% carbs,…

Cream cheese and carbs
So, I was not pleased when kraft cream cheese (and the store brand) jumped carbs from 1/serving to 2/serving. Not a big deal, but still irritating. Turns out Horizon organic cream cheese (haven't tested the taste yet), is 1 carb/serving. Most of my cream cheese usage comes in sauce/dessert, so we'll see how it works!

Intro
Some of you may know me from the Keto boards. My name is Nicole (I go by Nic), and I got tired of being a fat-*kitten*. I maxed out at 375.3 lbs. 11 months after starting this gig, I am down to 228.4. I lost the first 80lbs straight calorie counting (with lower carbs than most) and transitioned into Keto for the remainder…

Anyone have success making bone broth?
And if so, any tips/recipes? I am most interested in beef broth and concerned over it coming out bitter.
