Hey everyone, been off the grid for the last week. I feel very disconnected from all of you. Just read everything. Wow our lives move!

Becca - In order for a cake to rise it has to have gas bubbles in the mixture which expand on cooking. Gas is created through vigorous whipping, or a yeast reaction, or, most usually, carbon dioxide. Carbon dioxide is created by baking powder reacting with moisture. Baking powder is a mixture of bicarbonate of soda and an acid, usually cream of tatare. Your mix either didn't have baking powder in it, or it was out of date. Most people don't realise that baking powder can "go off" because the bicarb and the acid have been in contact with one another too long and have lost their reactive qualities. Most disappointments in baking are caused by using self raising flour, which has the baking powder already mixed in it. This goes off fairly quickly.
I find it best to use plain flour and add the baking powder to it. Make sure the baking powder is not out of date. Any packet mix you use should be fresh and well within date. We rarely use packet mixes in Britain as it is so easy to make the mixture from scratch with no additives. Muffins are just about the easiest thing in the world, the secret is not to stir them too much. The mixture should be still be lumpy and not totally combined. I have a great book called Muffins Fast and Fantastic.
My sister in law always said her baking adventures were a disaster until I realised she was using self raising flour that had lost its rising ability. I made her buy new flour and her next cake was a great success.

Thank you Heather, that is very helpful! I will add some baking powder to the dry ingredients. The baking mix is prepared by the Food Bank Co., so I do not think its expired. Sadly most of the other items we acquire at the food banks are, but not too far out of date.
That is one of the reasons I am really excited to move next year. Sharing the rent with son would allow us to live in a larger apartment, paying only $600. That would leave us $300 to live like normal people. Normal people go out to a restaurant every now and then. Normal people don't worry about meal planning, and having enough quarters to still do laundry. Normal people don't get pits in their stomachs because there is $100 and still 3 weeks of food buying to be made. So this move would elevate our quality of life totally. I hope it all works out!

Hello all: I went to the pulmonologist this morning and was there for quite a while. He wanted blood tests, pulmonary function test and CT scan this time to get a better idea of what is going on with the sarcoidosis. No problem with the blood tests but the technician that does the PF testing got caught behind an accident on her way to work so she was late. I had to wait for a while but got it done. I will do the CT scan in Monroe which is closer to me and then they will call me with results. I go back in six months unless something comes up. Hopefully all will come back well. It has been rainy and drizzly so the horses are hanging out in the shelter. Doing well on food today since I had to fast for tests.
TNToni - Sending you strength. I think I would be terrifically angry at that situation.

How could I forget to tell y'all about my 3 lb weight loss yesterday!?!?! Who knew that staying at 1200 calories a day and exercising some would lead to weight loss? DUHHH!8

Lanette – From ‘one door slammer’ to another … I sure wish that when this house was built; that I had just enough space at the bottom of the door to successfully do it. I sure miss it, it does make a ‘statement’ that you can no longer do it; that and ‘slamming down the phone on someone’ in the cradle.
MAJOR VENT - nobody should have to deal with this much $#*T in one afternoon. I’m meeting the ST FM adjuster at the body shop tomorrow to discuss the door problem. Front passenger door sounded like a cheap car and I took it back and he said that I needed to wait to bring it in so they would have gotten the backlog from the 2 storms that came through Albany in January caught up. Then I backed into someone at ST FM. I thought the driveway going around the side of the building was for ‘employee parking’ and they were all there, never expected someone to come zooming around. Since it was on ‘private property’ the State Patrol was sent. Nice young man and I told him ‘my’ side of the story and she told him ‘her’ side of the story. I never saw her and I looked over my left shoulder, over my right; back over the left and then into the rearview camera; did not see her but I her. Took a chunk out of my rear bumper. Had shown the body shop owner the issue with the doors and he said he’d be able to ‘fix’ it; but, when Louis and Trey went to pick it up they were told that nothing could be done and showed them that it matched up. “NO!” It doesn’t, you can put your finger on the driver’s side and it will hit a seam between the 2 doors; on the side that was damages, do that and you finger will hit a raised front door. The Agent at ST FAM noticed that the door was hitting metal to metal (actually front about ½ way back and the back half way to the front. Over $16,500 damage done to a 2015 Honda. Louis was really surprised that they did not total it. Hit in the front right passenger side and then hit a metal utility pole. I swear I thought I was ‘dead’. That was my thought, when I saw the light – “I’M DEAD!” I saw a bright light (from the side air bags deploying) and a 2nd bright light from when the hood was crunched up in the middle from the sun shining on it.
I am so upset; because when we had changed insurance (life) on my DH; and they were going to draft 2 months of premium out of my account this month – that is MORE than I make. The only reason we took this out and cancelled the other when it became in effect was so that it does not ‘stop’ at the age of 80. That was more than I ‘make’ in a month. So, supposedly, that had been ‘fixed’ or ‘taken care of’ by taking it off draft for May and then in the middle of June asking that it be put back on draft. I just hope they don’t draft it twice. I could not talk to her, I was WAY to upset, so Louis did and he understands what is going on. Gee, we’re paying more than we were; but, the only difference is it won’t run out when he turns 80. INSURANCE – you pay for it so that you ‘hope’ you don’t need to use it.
Then I had to deal with the Window World man; after the installer stood me up 3 times. Thankfully I had his cell phone number. It had been discussed that the pieces of the wood would be brought to us to stain/paint BEFORE they came to install them. So, right at the moment we have raw wood showing on both sides of the glass. That is totally unacceptable. He (owner) said he thought they had agreed that Louis would stain and paint them. He WOULD have if they had been brought to us in time to do so before the day of installing them. He wants me to be ‘as happy’ as I want to be. So he is coming next Wednesday to see for himself what I am dealing with. I am in such a pissy mood that I am just going to cruise through the rest of the posts.

Lanette! I miss talking to you! I’ve been busy lately and with Mother’s Day and spring cleaning I haven’t been on here too much! It’s funny you mention my EX in the middle of a bonfire! Ha ha! That made me think: One time after we were divorced and I was still working in the Palm Springs area, he was walking/running across the road, a four lane road, and I didn’t notice it was him at first. I just thought, what’s that guy running across the highway for? Then I noticed he had a limp and dark hair, It’s my EX!! Should I run him over, it would clearly be an accident as I had to brake so I didn’t hit him. What a dumb a**! Well, I didn’t hit him and he never saw me, so I guess it turned out for the best. He’s with a woman who he met in AA meetings. Perfect for each other! That leads me to another story!! Love the Dog card!!

Joyce and KJLaMore Sorry your husbands doesn’t give you any kind of recognition. My dad was the same way to my mother. He wouldn’t give cards or even Christmas gifts. The gifts we received growing up were from mom really. One year she complained so much, he got her a gift for Christmas. It was a toilet plunger with a clear Lucite handle! He tied a big red bow around the handle. She still has it even though my dad passed away in 2006. Maybe it was special to her. I think it was how my dad was raised. His parents came from Oklahoma and moved to California during the depression. I recently asked my aunt why I never saw my dad with shoes on when he was a kid. She said because they couldn’t afford shoes for all the kids. You never know the reasons why people act the way they do. I’ve learned not to react.

TNToni So sorry to hear about your money being taken without your knowledge! OMG! I would be angry too, I think I would make him get a 2nd job and replace that money! I’m glad you changed your accounts to just you. I would keep a close eye on your car payment and mortgage. My Ex was taking money out of our account to buy drugs. I found out when I had checks bounce, so I went to the bank and got my own account. That was in 1990. Now, my current husband and I have separate accounts and neither one of us wanted to merge our money for that very reason. I hope you can get this straightened out. Maybe have a few garage sales when cleaning out your junk.
Katla What fun to go riding and cut cattle. I used to do that when I was young at the local livestock auction. My mare was really good at it and loved it. I just sat there!! I had a number of horses over the years. My Ex liked to go roping and I went to watch with my kids.

Wow, I give up! I'm up to page 33 and I'm caught up from all the posts!
I started cleaning up the garage today. I have 3 boxes: Salvation Army, To Keep and Trash.
The trick is figuring out what I keep. I have so much stuff I really don't want, but I don't to throw away either.
DH helped for awhile until he wanted to go hiking. So I gave it up, it was getting hot in the garage anyway. I need to get some shelving to put stuff on.
I made enchiladas for dinner. Half chicken and half cheese. It was left over chicken and my DH says he shouldn't eat it because it might make him sick. I was a bit irritated at that remark, but he'll go to Taco Hell! He never gains a pound. 6'3" and 195bs.

Got a bit of a shock today. I give platelets every month at Carter Blood Care. I like that they give you a report on your cholesterol every time you donate. This month I gave twice (7th and 14th). My cholesterol has always been under 200. Occasionally I don't meet their iron requirement which prevents me from donating. They suggested eating a hamburger the night before. So I had a hamburger on the 13th, the night before my appointment. This was 93% lean meat. I met the minimum iron limit by one point.
Well, I pulled up my reports today. On the 7th, my cholesterol was 193. On the 14th, it was 237! A 43 point increase from eating one small hamburger... without a bun! I spent lunch today researching iron rich vegetables for my next appointment.3 -
Got my vent out of the way; good thing I said that I would only skim through the posts (actually reading them) … mine would have been a ‘record’ post! I might have blown this site up. Don’t want to do that.

Dana - The body shop is probably one of the best in town; and, they are a ST FM approved shop; I've dealt with the owner when I was a paralegal and even way back then, he was the man to go to. The was over $16.5K worth of damage on the car. Louis was 'really' surprised that ST FM did not total it; but, they have a formula and we even got an extra $1300 check 'due to depreciation'. Never had heard of that before. We even called to make sure we did not need to save it (for something unforeseen). I think when I show him and the ST FM adjuster what I am talking about and how the hit on the side and then on the front would have reverberated all the way back to the right passenger side and 'shifted' the doors, possibly. They don't have the little space between them like the driver's side does; and, the rubber around the door, flaps a little where it is not lined up. For me to be 'happy' they might have to take off BOTH left-side doors and rehang them. This is just not acceptable; but, I won't be 'ugly' about it ... I was ugly enough today to 2 of the people I dealt with.
Well, now to see who of the 8 become 4 on "The Voice" ... THIS is going to be a hard decision; most all of them are really good.

Jddavis – interesting about that cholesterol jump. Did the report give you a breakdown on the composition of the total cholesterol? HDL/LDL/Triglycerides? From what I’ve been reading lately, sugar and refined carbs cause high triglycerides, not meat/fat. There’s lots of new research about cholesterol and fat isn’t the bad guy anymore. I don’t think I’d sweat a one-time high reading like this, if it stays continually high then there might be cause for concern. That test they used could have been wacky too. You are a sweetie for donating platelets so much!
Dana, I loved those wineglasses you scored at the garage sale. Super cute! Funny story too about you nearly running over your EX. Sounds like fate was tempting you… . Good girl! We also are “Better Call Saul” fans. Thought it was neat last night that “Saul Goodman” showed up. Very creative writers on that show!
My DH has his own little spending money account and doesn’t spend/charge anything else without prior conversation with me. It took us a long time to agree he’s a financial disaster (visualize virtual cast iron skillet flying at his head). We agreed our high-spending (and earning) years are over, we don’t have any more room for junk/stuff, we really need to save $$ because health care costs and taxes could easily erode our savings.
Lenora – what an ordeal about your car. Don’t blame you for getting ticked. The Voice is one of the shows on “regular” TV I miss since we dropped satellite TV, tho I could probably find it on Hulu.
Becca, that’s so great about what a savings it would be to move to Whidbey! I hope that (or even something better) works out for you. I’m sure you can make that $300 extra seem like $1300 you are such a good money manager! Glad you and DH got your tablet use worked out. I spend a lot of time on my little fire tablet, mostly games too. DH doesn't grumble because he's glued to the tube watching every MMA bout that was ever fought. Bloody stuff... I get bored watching grown men punch each other like that but I am kind of fascinated by the many different cauliflower ears I see on there. Good Gravy DH says he wishes they had MMA when he was growing up and I try to imagine his ears all swollen and puckery looking.

Um… Yvonne, Joyce…. I’m sure there’s enough of Pierce for all of us...but, I just get him first! You get what’s left! I’ll tell you who is running a close second in my book = Justin Timberlake! I saw him perform a couple years ago on the Grammy’s or similar – great singer and great moves. He always smiles when he sings it seems. Dance, dance, dance!
I emailed my doc today and told her I was cutting my BP meds in half. Before I was on them, I was in the 140’s/90’s. Tried several different ones and finally had great luck with Losartan, been taking that for the past few years which keeps me in the 120’s/70’s-80’s. Seems every year during the summer I’m much more active and it drops so I halve it. Recently, it’s been diving really low sometimes– from 90 to 105/ 50 to 60 and I nearly faint, my pulse goes up into the mid-high 70’s (It’s normally in the low to mid 60’s). Anyhow, might be time to visit the cardiologist. I’ve had palpitations for years and have worn event monitors several times with nothing out of the ordinary, last time was a decade ago. They calmed down after menopause but I’m noticing them again.
I actually felt good today – BP still running low. I haven’t heard back from her yet. Barbie has me excited about doing some weight lifting and I need to make sure I can handle that. Walking is no problem but using upper body muscles seems to tire me quickly.
OK time to move it here.

Joyce, I surely hope your day got better. We just set ourselves up with expectations that we know will disappoint us. Why do we keep doing that??? My DD gave me the world’s best foot massage a few years back and I have asked her for some since but guess I never got them. Tonight I asked for one as icing on the cake of a great Mother’s day and she let me know that it “creeps her out” to touch someone else’s feet. OMG I never knew. And she gave the best foot massage in the world. Who knew??? Oh well.

Also please sign each post with the name you want to be called along with a location, general or specific. I have found that no one at the gym really pays any attention to me. Most people are there to work on themselves and that is where their attention is. Give it a try and just notice what people seem to be paying attention to.
Janet#2, that is too funny about the card on your flowers. You could always call the florist and ask them for contact info tor the strangers that sent you the flowers, saying you want to thank them. Lol

Last night I presided at the meeting for the Women of the Moose. The meeting went well and there were no big mess ups. Their meeting have to be conducted in a very exact way. Lol Today I did some cleaning and rearranging in my room and the kitchen. I’m still enjoying having our DD here but today DH asked me (not her) when she was going to go to work. Lol I’m thinking of all of you and hope you get what you need for your specific situation.

I am so inspired and encouraged by all of you. Today I rode my exercise bike and watched DWTS. I was surprised by the elimination, but that's what makes it a reality show. Reality is surprising. I had the house to myself for awhile when Jake met a friend for pie and coffee and then later went to a movie that I didn't want to see. He loved the movie and I loved having the house to myself for awhile.
Heather, How disappointing that your new house plans have gone awry. I wish you an even better outcome than you had planned. Do not be discouraged.
Becca, your thrifty money-stretching skills remind me of one of the things I most admired about my mother. If you move to Whidbey Island, you will be much closer to me and perhaps we can have a rendezvous sometime.
Dana I got the new credit card in my name only today and tomorrow I'll be depositing money in my new bank account from my IRA. Things are going well right now, but I'm taking some important steps anyway to protect myself.

Hi everyone. Just got home from work and so tired I'm heading to bed. But before I go, a bit about me.
I live just north of Dallas, TX. My oldest son just graduated college and the youngest will be a sophomore at Blinn in the fall. We down graded two years ago to an awesome apartment that we love. We look out over a nature preserve that I love to hike. I work for a promotions company but also started a freelance copy writing business in January. I coach soccer and belong to several clubs that keep me busy.
I lost about 65 pounds between 2010 and 2012 with WW. I was thin but not fit so I still wasn't happy. It didn't hit me until today when I was looking at photos that I started putting it back on when my mom died in 2015.
My husband and I made a bet that the first to lose 10% of their body weight gets to pick our next trip destination. I figured it was a good way to get back on track. Right now I'm kicking his booty. I know I'll never be satisfied just losing weight. I have to be fit and at a healthy weight. My dad has Type 2 Diabetes with all its complications. I don't want to be there in a few years.
Well, that's more than a little bit but explains why I'm here. All the posts are very encouraging and uplifting. You are all a special group of ladies.

The Son and The Preacher also in AMC are faves. I like Pierce Brosnan and they do a good job on the Texas accents. Since I lived there I pick up on that right away. Preacher is a kick!! It's so over the top!!
DJ. No, DH will not eat leftovers. Not even chicken. Half the time I end up deboning the rest of the chicken and put some away for my lunch or two then chop the rest of it for our dog. I'll mix it in her dry dig food o nothing is wasted.
DH loves BBQ brisket, hamburgers or TexMex so my options are limited when it comes to chicken!! We eat out a lot!

Barbie, oh I would love to get together with you sometime! Its interesting how life steers you one way. When we talked with our son about moving in with him, and how funny that sounded, but then the look our son gave us, and how we all said, it doesn't sound as crazy as we thought! The fact that our son has about 7 months rent saved up, and we could make that savings last twice as long, by paying half his rent, seems perfect. After my husband rec'd his liver, we figured we'd just grow old and grumpy here, so its kind of put some giddy in my giddyap!!

Dana - Your story of the ex husband made me think that would be a great opening for a novel, or screenplay. Leave it open as to whether or not she ran him down and then flash back to the back story. Then rerun the "potential accident". I think I would, teasingly, still leave the denouement open at the end. Maybe. Or find a surprise ending.
The cleaner I had last week is coming this morning for 2 hours. Not a lot for her to do as we "cleaned" and tidied yesterday for the viewing. I think I will get her to deep clean the living room first - go under and behind sofas etc, skirtings. I have a thing about clean skirting boards. Our stair carpet is grubby too. Then maybe a whizz around bathrooms. She was very good last week. We will be on our exercise machines when she arrives.
When she finishes I am catching the bus (in the rain) to Southampton to meet my Portsmouth friend for shopping (hers) and lunch. She is soon moving to York in the north of England so I won't see so much of her. She still has a tiny apartment in Portsmouth, but I don't think she will get down much. This expedition is partly to get her savings out early (they are fixed term) with a penalty, and she has to be there in person with I.D. I will be so sad not to see so much of her. Of course, I will visit, but it's a 5 hour expensive journey on two trains plus a tube through London. So not that often.

Arrived in Birmingham yesterday by train and found that due to the finding of an unexploded WW2 bomb the local trains were cancelled. Had to get a taxi, traffic horrendous due to diversions etc. They had to do a controlled explosion as it was so big. The city was in turmoil, traffic awful at the best of times. The guy who hit it with his digger was lucky though.
Hoping to get some walking in today but weather doesn't look too good

Morning, all...
Headed to Carlsbad, N.M. this morning for a meeting, but don't have to leave until 8:30 my time, as the time difference is in my favor going that way. Not in my favor coming back, but that's life. It's about a three-hour drive with potty stops, so six hours of today spent in the car. Unfortunately, through some seriously bad oilfield traffic, as that area is just a hornet's nest of new drilling, and mostly two-lane roads. And seriously boring countryside. The pumpjacks (rocking horses, as I called them when I was a kid) are the tallest thing in the surrounding scenery. I invested in a half-dozen CDs, which I haven't bought in years, for sing-along music.

Kate - Just took a look at the Internet coverage on the WWII bomb they found in Birmingham. Amazing how wars continue to leak into our lives decades, even lifetimes later.
Off to the races, y'all. Brought home ten file boxes (and a small file cabinet) filled with files and stationery to use, as well as a printer, so that I'll be able to produce all the written correspondence for the job. Should be able to be home for the next few weeks, and looking forward to that. Got a lot to get up to speed on!

Morning, another big busy work day, but have my food all prepped ahead. I am avoiding gluten, all processed food to see if it helps with my symptoms. It hasn't been confirmed by a doctor but I suspect a gluten intolerance. After 4 weeks without wheat, barley, etc we will see if I reintroduce what might happen
Julie lots of ladies here do strength training, Mary is just one expert to ask questions about adding this to your life. Barbie also does some strength training, I think.

Morning Everyone!
I'm supposed to be reading a contract right now but instead I'm sitting in the dark watching the lightening and listening to the thunder roll in. Strange...the weather report says sunny and a high of 90 today.
Ironically funny...I'm trying to lose about 30 lbs by the fall. My 19 year old son, who is 6'5" and 150 lbs, is trying to gain 30 pounds before he goes back to school in September. Maybe we can workout together? ;-)
Quick mom-brag moment: This is my oldest who graduated from UNT on Friday...and started work Monday morning!
Lisa - Where are you in West Texas? We have family in Lubbock and visit about once a year. DH and I both went to Texas Tech. I've lived in Dallas most of my life, except for stint when we moved around Colorado and N. California. Then I regained my sanity and moved back home. I'd never heard of Princeton, Tx until you mentioned it. I need to get out more.
