    So guys. Yesterday was a really good day- I DEFINITELY enjoyed my rest day, haha.
    I've got a dentist appointment today, but will hopefully be hitting the gym after that. I'll definitely get some extra miles in this week!

    I just made the following tonight. Made it up as I went along and it was yummy and very fillling. Canellini beans are an excellent Low GI alternative to many carbs you would usually stuff peppers with:)

    MEXICAN CANELLINI STUFFED PEPPERS (SERVES 2)
    230 cals per serving.
    For snack/side or starter

    2 peppers
    1 cup canellini beans (I use dried, soaked beans as no sodium, but for quickness you can use tinned
    Spray Oil
    2 cloves garlic
    1 onion
    1 tbsp tomato ketchup
    12 tablespoons of extra light cream cheese
    2 tsp capers (use instead of salt) or use a pinch of LO salt
    2 pieces of sundried tomato (if you don't have it the recipe will still be nice without)
    big squeeze of lime juice
    1 tsp of coriander
    1 tsp of cumin
    1 tsp chilli powder
    Some ground black pepper to taste
    If you prefer use some pre-made Mexican seasoning as well as above spices or instead

    Pre-heat oven to 180.
    Put all ingredientds in a food processor and blend. If you don't have one, mash to beans then chop the other ingrediends very finely.
    Half peppers. Spray bottoms with spray oil.
    Put filling inside
    Give a spray of oil
    Put in over for around 45mins, watching closely until golden.

    EAT - Yummy!

    Spinach and Mozzarella "Pizza"

    Ingredients
    1 tortilla Ortega - Whole Wheat Tortillas (8 Inch)
    1/4 cup Pellicano's - Southern Italian Pizza Sauce
    1/4 cups Fresh Spinach
    1/2 Generic – Tomato Large
    6 olives Black Pearls - Medium Pitted Black Olives
    1 g (2 tsp) Sage, Fresh
    1/4 cup Kraft - Fat Free Shredded Mozzarella Cheese
    8.5 slices Hormel - Turkey Pepperoni Slices

    Lay the tortilla on a cookie sheet. Spread on pizza sauce with a spoon. Add spinach, tomatoes, black olives, sage, cheese and pepperoni slices. Cook on 350 for 20-25 minutes depending on how crispy you like your pizza

    Just finished an extra mile and the 50 lunges on each leg. Now getting ready to do my normal work out.

    And also, I'm really sorry about this, guys. I feel really bad about it. I just had a huge blowout with my dad and now I'm moving in with my aunt for tonight, though it could also be for a few more days if I don't settle things with him. I'm going to do my best to keep up with the exercise and keeping under my calories and water drinking, but I'm not sure how things are going to work out. But I need a break from my dad right now, or I'm going to go crazy.

    did everything that was required today plus I ran an extra mile tomorrow I plan on hitting it hard. I was very light headed this AM which caused me not to work out in the morning but I got a little in this afternoon...I am off to bed now..need rest...

    I did a mile and a half walk sunday- thinking it could count for this challange. Let me know if not otherwise i will continue on with the 3.5 left for the week.

    I just picked a random fruit salad recipe on the internet, and it looked good and easy. :tongue:

    Ingredients

    1 pint strawberries - cleaned, hulled and sliced
    1 pound seedless grapes, halved
    3 kiwis, peeled and sliced
    3 bananas, sliced
    1 (21 ounce) can peach pie filling
    Directions

    In a large bowl, combine the strawberries, grapes, kiwis, and bananas. Gently mix in peaches. Chill for 1 hour before serving.

    If riding bike counts put me down for 40 miles LOL I'll do that in the next two days! I'll put down my running miles and biking miles. So far it's 5 miles run (2 more than my normal miles)

    I'm glad I chose this because back then I could eat almost a whole pie by myself lol now I see how much I was eating and will take that into consideration this Thanksgiving :noway:

    So, I've done the mile that was part of today's regular challenge, and a total of 4.5 extra miles toward our 100. Can we add those up to see how many more extra miles we need?
