    So this morning I jumped on the scales and . . . I'm 238.7 That means a grand loss of 4.4lbs!!! Man I love MFP!! And I love this challenge! It's really pushing me. Ok off to finish my assignment so I can go to the gym. Have a great day everyone!

    Since the majority of recipes are main dishes, I would like to share my favorite dessert recipe. It's from Hungry Girl. I've made it a few times since I found it. It's so yummy to me and was a big hit with the birthday folks who were the reasons for me making this cake.

    HG's Upside-Down Pineapple-Applesauce Cake

    Ingredients:

    Topping
    1 tbsp. light whipped butter or light buttery spread (like Brummel & Brown)
    1/4 cup brown sugar (not packed)
    7 pineapple rings packed in juice, drained
    7 maraschino cherries

    Cake
    Half of an 18.25-oz. box (about 1 1/2 cups) moist-style yellow cake mix
    1 1/2 tsp. baking powder
    1/2 cup club soda
    1/4 cup no-sugar-added applesauce

    Directions:
    Preheat oven to 350 degrees. Spray a round cake pan with nonstick spray and set aside.

    Place butter in a small microwave-safe bowl and microwave for about 15 seconds, just until melted. Add brown sugar and mix well. Spread mixture evenly along the bottom of the cake pan. Set aside.

    Blot pineapple rings and cherries with paper towels to remove any excess moisture. Lay pineapple rings in an even layer in the cake pan, and place one cherry in the center of each pineapple ring. Set aside.

    To make the batter, combine cake mix with baking powder in a large bowl. Mix well. Add club soda and applesauce, and stir until smooth.

    Evenly pour batter into the cake pan over the fruit layer. Bake in the oven until a toothpick inserted into the center comes out clean, 30 - 35 minutes.

    Allow cake to cool completely. Firmly and securely place a plate over the pan, and carefully flip so the plate is on the bottom. Gently lift pan to release the cake.

    Cut into 8 slices and dig in!

    MAKES 8 SERVINGS

    1.LORI- I will commit to at least 10 miles towards our 100 as a team this week (will do more if needed but I want to see this being a TEAM EFFORT)
    2. JULES - I'm happy to do at least 10 miles towards our 100 as a team this week (will do more if needed)
    3. JILL - sorry, I'm going to be a piker...I'll commit to 7 miles - it's TOM week ...going to be a struggle! I'll try for more, but I'll commit to THAT!
    4. ELANA - I can commit to 8 miles for the team this week for sure! If I'm able to complete more, I definitely will.

    I have also just completed today's exercise challenge. I gotta tell you though I didn't think I was going to complete the full fifty but managed to push through it! Cheers for the add/invite to the challenge I look forward to a week of butt kickin' results! Yeeyaaah!

    Water - 120 oz. - done
    Rest day - nope - two miles done
    Calories - went over, but because I did the running, I'm ok.

    Hey everyone!
    My name is Anina and I just joined your challenge this week - cheers to KJ for the heads up and to Lori for letting me in. I've been a fitnesspal member for a while but I took an unplanned sabbatical (i.e got over logging food!) But my mate KJ has has steered me back and I am over the moon to be back. The vibe from everyone since I've logged back on has been fantastic. The good energy and encouragement from complete strangers just enables me to succeed.

    Checking in for the night! Water was good, calories were under, and here is a yummy breakfast recipe from MyRecipes.com (I'm not that talented at cooking on my own, so I rely on recipes from others all the time!)... I've made this a couple of times in the past and it is awesome! I also like it because it's pretty quick to make, which sometimes is necessary for breakfast prep. I'm including the ingredients/nutrition facts from the site, but I substitute the 1% milk with skim, I actually don't eat black beans, and I once didn't include the two whole eggs (still awesome and delicious - I think I might substitute Eggbeaters next time!):

    Breakfast Tostadas


    Ingredients

    1/4 cup 1% low-fat milk
    1/4 teaspoon salt
    1/8 teaspoon freshly ground black pepper
    4 large egg whites
    2 large eggs
    4 (6-inch) corn tortillas
    1/2 cup (2 ounces) shredded reduced-fat sharp cheddar cheese
    1 cup canned black beans, rinsed and drained
    1/4 cup chopped green onions
    1/2 cup bottled salsa
    1/4 cup fat-free sour cream

    Preparation

    Combine first 5 ingredients in a large microwave-safe dish, stirring with a whisk. Microwave at HIGH for 3 minutes; stir. Microwave an additional 1 minute or until done. Arrange 1 tortilla on each of 4 microwave-safe plates; divide egg mixture evenly among the corn tortillas. Layer each serving with 2 tablespoons cheese, 1/4 cup beans, and 1 tablespoon green onions. Microwave each tostada at HIGH for 30 seconds. Top each tostada with 2 tablespoons salsa and 1 tablespoon sour cream. Serve immediately.

    Like KJ I am also from the Land of the Long White Cloud aka New Zealand. However, I am of Samoan descent. The profile pic was taken at a Poly night fundraiser I organised here in the ROK last November.
    My English/Aussie husband and I came to Korea for a year because I needed a change of scenery...that was 5 years ago! :laugh: At the moment my life consists of study full time, working part time and exercising. Despite loving our life here though we have decided to leave at the end of this year to head to South America. :laugh:
    And that's me in a nutshell...kind of! :smile:

    Today was a rest day, but I walked 3 miles!! So, I didn't accomplish "rest"?? haha!!
