    I love my crockpot. With 6 people in our family it's great to use on busy nights. Here are some of my favorite recipes.

    Taco Soup

    2lbs ground meat
    2 cans niblet corn
    2 cans pinto beans
    2 cans tomato soup
    2 packs of taco seasoning.

    Just brown the meat and then throw everything in the pot and stir.

    Cheesy Mexican Chicken

    2lbs frozen chicken breast
    2 cans rotel
    1 pack taco seasoning
    2 cans fiesta naco cheese soup

    Mix everything together in the crock pot, then place the chicken. Cook for 8 hours and then shred the chicken. I served it over rice, but it would be great in a soft taco shell, or on chips.

    Pot Roast

    1 chuck roast
    2 packs lipton onion soup mix
    2 cups water.

    Mix together and cook for 8 hours.

    BBQ Chicken

    3 lbs chicken drumsticks
    1 bottle of bbq sauce

    Like someone else said, you can really do anything in the crock pot, as long as you have time to let it cook. You do have to make sure that you have enough liquid so that it doesn't dry out on you.

    Um, one thing I like to do in the crock pot is carnitas, for use in enchiladas, quesadillas, a taco salad, etc.

    2-4 pounds pork shoulder or chicken
    one package taco seasoning
    4 oz can diced chiles

    rub meat with taco seasoning and chiles, put in crock pot dry, cook on low for 7-8 hours, then pull apart with two forks.

    Slow-Cooked Chicken & Mushroom Stew

    10 3/4 oz can 98% fat free cream of mushroom soup
    half of soup can of water
    4 boneless, skinless chicken breast halves
    1/2 tsp salt
    1/4 tsp pepper
    8 oz. pack mushrooms cut up
    1 cup baby carrots or sliced carrots
    2 ribs of celery cut into small pieces
    1/2 tsp garlic powder

    Makes 4 servings

    1. Combine soup and water in slow cooker.
    2. Cut chicken into 2 inch chunks. Sprinkle with salt and pepper. Place in slow cooker.
    3. Add mushrooms, carrots, celery, and garlic powder. Stir gently to mix.
    4. Cover. Cook on low 8 hours.

    Per serving: 230 calories, 5 g total fat (1.5g saturated, 0.5g trans) 75mg cholesterol, 900mg sodium, 14g carbs, 2g fiber, 4g sugar, 30g protein, 150% DV vitamin A, 8% DV vitamin C, 6% DV calcium, 10% DV iron

    Serve with rice , or no yolk egg noodles Don't forget to add your calories for the rice or noodles.

    This one is great for lunch!

    Chicken Tortilla Soup
    Ingredients:

    * 28 ounces Crushed Tomatoes
    * 10 ounces Rotel
    * 16 ounces Black Beans
    * 16 ounces Kidney Beans
    * 10 ounces Corn
    * 1 package Taco Seasoning
    * 1 package Ranch Seasoning
    * 2 Boneless, Skinless Chicken Breasts (approximately 5 ounces each)

    Directions:

    If using canned beans, rinse all beans thoroughly. Then dump all ingredients into a slow-cooker and heat on high for 2-3 hours. Shred chicken breasts when cooked thoroughly.

    Freezing Directions: Let soup cool and then portion two cups of soup into quart-size freezer bags. Lay flat and freeze.

    Servings: 5 • Serving Size: 2 cups • Calories: 350 Fat: 1.5 • Protein: 14.1 •

    bbq shredded chicken...i made this on sunday it was so tender and good.

    i use two chicken breast. poured one cup of bbq and 1/4 cup of water.
    cooke don low for about 6.5-7 hours. shred with two forks.
    i made sammiches out of it. and baked some onion rings to go along with it!! GREAT!!!

    made 4 cups (4 servings)
    250 cals per serving
