Chicken, Chicken, and more Chicken!

I am trying to stick to lean meats and I do not eat seafood. Any suggestions on how to prepare chicken differently so its not the same thing every day?

    Hummus Crusted Chicken

    1. Sprinkle chicken lightly with salt and pepper. Spread chicken with hummus; roll in bread crumbs.

    3. Heat 2 tablespoons oil in a skillet over medium heat. Add chicken; cook 12 minutes or until no pink remains (170 degrees F), turning once. Add more oil, if needed. If crumbs brown too quickly, reduce heat. Serve with lime wedges. Makes 4 servings.

    I eat chicken the same way, everyday, but I love it. It's simple and tastes great.
    I use boneless, skinless chicken breasts and cook them in my George Foreman Grill, with Italian seasoning and cracked black pepper. Once fully cooked, I cut it up (looks like I have more on my plate!) and drizzle olive oil over the pieces, adding more seasoning and pepper.
    It's SO good!

    You can make healthy versions of chicken parmesan and pineapple chicken. Also, some chicken white bean chili for the winter time. YUM!!!

    And I'm making chicken adobo in about 20 minutes!

    I marinate chunks in a little olive oil, balsamic vinegar and various herbs for a couple of hours, then skewer like kabobs and grill. I like to serve it with brown rice and some sort of vegetable...

    My husband likes orange juice and a little soy sauce when he marinates.

    I love this recipe! I don't care for meat on bones, so I use boneless skinless chicken (breast or tenderloin). I skip the prosciutto because its pricey and I don't need the extra calories. I double the amount of peppers and add two yellow onions (sliced) to increase the proportion of veggies to meat. I use a large pinch Italian herb mixture instead of thyme/oregano/capers/parsley.


    This is an excellent, low calorie Italian option. It stands alone very well but my husband prefers it over a bed of pasta.

    I make a mexican version of this recipe by adding fresh jalapenos with the peppers, and using Rotel diced tomatoes with green chiles. This can also stand alone or be served with small tortillas for fajitas. Garnish with fresh cilantro and scallions!

    I'm working on an asian modification next!

    I stuff chicken breasts with Laughing Cow Garlic & Herb cheese and bake. Delicious and the whole family begs me to make it.

    I just made a light chicken spaghetti tonight for dinner which is a really popular southern staple...but, isn't neccesarily the healthiest in its original form.
    You Need: (increase size to what you need; I cook for 1...so, all my recipes are scaled WAY down, size wise) but..so, you get the idea:

    Chopped chicken breast
    low sodium cream of chicken/mushroom soup
    ww spaghetti noodles ( I use Fiber Gourmet LIGHT spaghetti-saves a TON in calories)
    pepper, season salt, cayenne,-loads of black pepper
    chopped celery, green pepper, and onion ( I occasionally add mini peppers as well) and chopped spinach if you need to up your veg
    shredded low fat cheddar cheese

    Mix all of the above together with low sodium chicken broth, smalal splashes at a time. Load into baking pan, top with additional shreded cheese. Bake at 375 for 25-35 minutes.

    Eat and Enjoy. With my ingredients, I can eat an ENTIRE pan for under 600 calories! It's amazing and feels so decadent. :)

    I use just a little bit of olive oil and fresh rosemary. Sometimes, I add garlic. I find the smells very appealing, and since I'm not a chef even in the very least bit -adding aroma/flavor without a recipe does it for me!

    I sometimes eat the chicken first, then the green peas, sometimes the other way, and on days I feel really frisky, I eat them together. Some days, not a lot of energy left, so I just rotate the plate 90 degrees.

    i made a marinade orange zest and juice, soy sauce and wholegrain mustard! amazing x

    However, my boyfriend loves when I prepare it with parmesan cheese and wrap it in parma ham then fry it in coconut oil :smile:

    i sautee a carrot and a head of brocoli in the 0 calorie butter spray with some garlic and then butterfly the chicken breast, stuff it with the sauteed carrot and broccoli, and i use tooth picks to keep the chicken seams in place....spice accoring to taste, cook in oven for 35 mins @ 375.....its REALLY good....if you can spare the extra cals, i add dry bread crumbs on top before cooking

    Do you ever see chickens flying around? :tongue: They live on the ground. Mass produced chickens are muck for your body, and spend their entire lives crammed into tiny pens in disgraceful conditions...its funny, when you stop eating them its hard to imagine seeing one chopped up on your plate covered in gravy!

    My whole family eat chicken (has to be organic & free range though or I wont prepare it for them!)

    Good for you. But the board here was how to prepare chicken, not for you to tout your personal beleifs about not eating it. Probably have better luck preaching somewhere else....

    Buffalo Chicken Salad.

    Cut it into bite size pieces, cook it in a frying pan with some pam until done.... cover it in Franks Hot sauce and put it on top of a salad. I make a salad of roman lettuce, lots of celery and carrots, tomatoes, etc. Get a low fat ranch dressing or make your own with greek yogurt.

    Cook a bunch of chicken breast in a crockpot, shred it. Make pulled chicken BBQ sandwiches. Chicken Shepherds Pie. Shredded chicken tacos. chicken veggie soup. I will do this when it's a busy week and just keep a container of shredded chicken in the fridge. Even works on salads, in pitas for sandwiches, etc.

    Marinate it in an Italian dressing or Greek marinade for kebabs. Yum! A yogurt cumcumber sauce for a greek meal. I will do that with big slices of veggies for the grill.

    Once again, for a busy week... I will grill up chicken, pork, etc. and cut it into cubes for the fridge. So when I only have a few minutes to fix dinner.... I have it. When I was single I did this a lot because I hated lighting up the grill for one piece of chicken or fish. So I would grill up three or four meals for the week.

    I really don't care for chicken. I get burned out on it really easily.

    That said, my brother-in-law makes the BEST chicken on Earth! He marinates it in olive oil and fajita seasoning and then grills it. It stays juicy and delicious for days! I have gotten him to grill an entire bag of chicken for me in the past and then I had food for the week. I need to do that again, actually.
