What do your meals look like (show me pictures)....

Tangy pork salad with lime and lots of herbs, another winner by Melissa Clark. (I omitted the noodles, mung bean sprouts, and honey; I also used just one small shallot instead of the half cup the recipe calls for. Oh and I halved the fish sauce. Then I added a few peanuts.)

These past few weeks I settled into making a batch of bean soup every week. I portion it out as soon as it's done, so I have a small grab-and-go serving of bean soup each day as my second meal. This simple soup was made with Rancho Gordo Tuscan Red Beans, which produced an amazing velvety, pink-ish pot liquor. The veggies were celery, carrot, onion, and kale.
I know the photo of the meal isn't super amazing, but this was really good. I added some more olive oil to my serving, in order to meet my macros.

Spicy coconut greens with tomatoes and shrimp by Yotam Ottolenghi, another chef whose recipes rarely fail me. I swapped out the coconut oil for olive oil, because I'm working on reducing my saturated fats and the coconut milk provided plenty of the required flavor. I also used less onion, and twice the shrimp. And I skimped on the spicy things, because spicy foods don't like me.
This dish is a lot of work, but not hard to make. Just takes some time to wrestle all those collard greens but then they turn into a velvety goodness that makes for a real comfort food. I can't get enough of this.

Dinner outside in the hot summer rain! (Under an umbrella)
Appetizer - escargot and walnut salad.
Dinner - lamb curry with vegetables. (Had some pineapple in there too… so good!)

First night visitng my home town and and seeing mom in the morning. Not much open at 21:00, even downtown on a Friday night. Ended up at a surprisingly good Bao place.

Dinner last night: spaghetti w homemade marinara. Garlic toast and salad.5 -
Garlic toast and some pasta salad to use up some veg I had hanging around in the fridge.4 -
Lunch at mom’s retirement home wasn’t too bad. The scary looking puck was a rather over processed turkey burger.

On the other hand, dinner at mom's retirement home was gross. I only ate coleslaw and the dessert of fruit salad. The fish and chips had been clearly deep fried at the start of the dinner service and then held under a salamander for 45 minutes, when we turned up.

As mom complains about food at the retirement home, we took her out to dinner at a restaurant recommended by her carer. This was the first time I had NE China (Dongbei) style BBQ. Very similar to Korean BBQ where the restaurant served sides I consider Korean staples such as barley tea and kimchee. We BBQ'd beef short rib, duck breast, courgette, nien gao (=rice cake) and wrapped stuff in Peking duck pancakes and lettuce leaves. There were spicy cabbage and radish pickles as sides, a sweetish hot sauce, a sesame sauce, a condiment of slivers of raw jalapeno and pickled garlic, and another condiment that was mostly ground cumin.

🍽️ Thin sliced chicken breast with sumac and Za’atar.

Play on Ramen: Chicken Bone Broth, Shredded Chicken, Mushrooms, Green Onion, Protein Noodles and an Egg9 -
A quick lunch: romaine lettuce with smoked kipper fillet (herring), mayo, and a bit of green onion. Plus a sprinkle of flax seed oil, and some flax seeds for crunch and omega-3 fatty acids.

@RunningGirlKC tell me more about protein noodles!
@takinitalloff - I love when I see herring in this thread! Omega 3s for the win! I’m always trying to get more.2 -
Retirement home food dinner with my mom. Carrot and ginger soup, factory made beef tortelleni with tomato sauce and some unseasoned roast veg, fruit salad.

This week's bean (well ok, pea) soup: Golden chicken and vegetable soup with chickpeas -- I reduced the carrots and onion, and slightly increased the amount of green beans. I made a huge pot of this, so I have soup for the week and lots left over for the freezer. Nice comfort food for this early fall weather.
@SafariGalNYC I'm also chasing after the omega-3's, haha. I've changed my eating habits quite a bit over the summer, and salads with fish are a new thing for me. I'm really liking the smokey flavor with the bright greens. Your dinner outside in the rain looks great, I love rain! Did you cook that meal yourself?
@acpgee I've been enjoying your nursing home dinner saga. Yesterday's dinner looked decent, I hope it tasted alright. I do feel for your mom. Also I look forward to making Pad Kra Pao, yum. Yours looks delicious.
@RunningGirlKC I keep greedily eyeing your ramen-ish soup 🤤 Will definitely use this for inspiration!
@ddsb1111 I love that you are opening the boys' eyes & minds to the wonders of good and nutritious foods. I'm sure I don't need to tell you that you are changing lives. I know these kiddos will think back to your joint cooking adventures for as long as they live! Also the bread looks fantastic... hard to believe this was your first attempt. And the pasta on those black plates looks like something you'd get in a fancy restaurant.2 -
@takinitalloff That definitely looks comforting! I’m a soup fan, could eat it whether it’s hot or cold outside.
We’re heading to Croatia soon so we’re pretty much emptying the fridge before we go, so no exciting meals to post. I am making more bread though, and have my first sourdough starter, so that’s exciting. I’m hoping to bring some Croatian dish ideas back with me to try with the boys. Think they’ll try Octopus? 😆1 -
@takinitalloff - thanks! That dinner was on Madison Ave in nyc good thing about the rain.. we only had 2 other patrons in the restaurant sidewalk area .1

I made a master stock, and basically cooked my whole dinner in it to break it in lol. I have beef neck, mushrooms and onions, baby bok choy, tofu and carrots.

Retirement home food with my mom. She complained bitterly about the under seasoning of the ribs. Some residents complained about sending back undercooked meat. Others demanded getting a saw for dealing with overcooked meat. Maybe I am just not picky because I thought they were fine with the use of the salt shaker. I am going to ask for oil and vinegar for salads with no dressing next time.

Chicken Enchiladas - Realgood Brand at Costco or Target.
Great Macros!3 -
@takinitalloff and I are on the same wavelength again for soup Tuesday. Made a chicken, veg, and orzo soup with the whole chicken pieces after Sunday’s chicken pot pie.
Lunch was a simple but delicious use of the farmers market haul from the weekend
Still more to go!!

Bibimbap - beef crisped with coco aminos, splash of sesame oil and spices - grilled zucchini, carrots and mushrooms. Topped with green onion and of course, soft boiled egg.5 -
Mediocre suburban Ottawa Chinese restaurant to give my mom a break from retirement home food. She doesn't like going to restaurants on her own but I should set things up so she can order food delivery. Though Chinese food for one is not so exciting.

@RunningGirlKC OMG your Bibimbap looks like the most delicious thing ever to me right now. Must. eat. Thanks for the inspiration!1

I’ll start sharing recipes with pictures (or links)! The mobile version for community is not ideal 😂2 -
Another retirement home dinner with my mom. I think my problem with the food is avoidance of alliums. Tonight's dinner was sweet potato soup, shepherds pie with over cooked broccoli and the option of fruit salad for dessert.
