Hubby met up with a mate for dinner so I was on my own. Was originally planning to make pho with leftover roast beef but that was too much trouble cooking for myself. Fake philly cheese steak made with the leftover roast beef.

No rehearsal tonight so had a nice night in. Pesto pasta and salad. Finished an audiobook too!2 -

Leftovers mostly. Waldorf salad from a few nights ago stretched with store bought pickled beets and onions, salt beef warmed up in the microwave. Microwave and air fryer baked potato. Microwave carrots finished with butter and maple syrup on the hob. Butter for the potatoes.

Yesterday I was just so not hungry, I had leftover kilbasa & cabbage from the night before and that's it (other than coffee w/cream). I even had to add some butter just to up my calories a little.
Today I was hungry, so I ate 2 meals.
The first was some air-fried chicken drumsticks seasoned with a goya packet and brushed with a no-sugar-added bbq sauce I found at Walmart, I really like it. Also w/some plain steamed broccoli.
The second I sprinkled some tilapia fillets with some salt & lemon-pepper seasoning and threw it in the air fryer. Then I steamed some green beans, sauteed them in butter sprinkled w/a little garlic powder.
Now I'm soooo stuffed lol.

It really was sooooo goooood! Highly recommend Walnut oil is pretty neutral. If you taste it by itself you get a hint of walnut, but if you use it in a dish I'd say it's pretty much flavorless. I use it to meet my fat macros in a healthy way (been reducing my saturated fats and substituting with olive/avocado/walnut oils).0 -
Taco dinner where only the masa harina tortillas and griddled onion and red pepper were freshly made for tonight. Leftover sous vide lamb shoulder pulled out of the freezer, leftover guacamole from a lunchtime takeaway, leftover pickled cabbage from the last time we had tacos. Fresh raw coriander, sliced cherry tomatoes and lime wedges. The salsa was store bought and pimped up with store bought aji amarillo.

I'm gonna look out for it, gotta give it a try.
At this point I do a balance of sat fats/unsat fats because the sat fats have played a huge role in satiety for me to help me get past my eating disorders. In time, esp. after this round of PT for the next couple of months, I hope to get cleared to start strength training. At that point I wanna up my protein and lower the fats/mainly sat fats.

That's awesome! That's exactly how it went for me. I started with "regular keto" and then gradually switched toward what I call high-fat/low-carb Mediterranean. My saturated fat intake is still too high (around 20g/day instead of the 13g/day that is recommended for the amount of calories I'm eating) but it's far better than it was. I haven't found any difference in satiety levels between eating meat/butter/coconut oil/heavy cream then, vs. olive oil/nuts/seeds etc. now. I wish more people knew about the satiety benefits of eating more fat! It's so nice not feeling like I'm starving all the time. Fat for the win, haha. Anyway, glad this is working for you!0 -
Batch cooked with a girlfriend who needs freezer meals being a working single mom. Besides what we ate tonight, we put 5 portions of cheat's teriyaki chicken with veg and 4 portions of brown rice in her freezer. Dessert was creme brulee made in the microwave and finished with a blow torch.

After barely eating yesterday due to upset stomach, I was pretty hungry this morning and started eating as soon as my eating window opened.
Scrambled eggs, bacon, and a quick almond flour microwavable bread w/a light smear of cream cheese:
Evening meal: Taco bowls. I browned & seasoned the meat then added a bit of tomato sauce & sauteed onions. I put out shredded cheddar, spinach, lettuce, cucumbers, grape tomatoes, black olives, salsa & sour cream. I took a bit of everything. I also put some queso flavored pork rinds on the side but didn't eat many of them, I wasn't in the mood.

Coconut, Fish, and Tomato Bake... a repeat because this was sooo delicious. I even love those little squirty cooked tomatoes, which I'm usually not a big fan of. Can't get enough of this dish, yum. Real comfort food that doesn't leave me feeling awful later. I used salmon.
Southern Green Beans by Rachael Ray -- not a winner. I did omit the sugar, maybe that would have made it ok, but I doubt it. Either way, I don't eat added sugar anymore so if it's going to work for me, it has to work without. I ended up making the beans worthwhile by adding a little mayo to it, but didn't take another photo. The meat is a pork loin chop cooked with a little smoked paprika, s&p, and deglazed with white wine.
@acpgee I love that you cook with your single mom friend. That is some tangible support that makes a real difference I bet.4 -
Using up leftover roast beef and lamb shoulder. Another dinner of fake philly cheese steak with a side of sprialized and air fried beetroot chips. They got a little scorched so will try next time at a lower temperature.

Air fried pork chop, asparagus, & cauliflower puree w/parmesan.

Turkey Cutlet by Rachael Ray (I did not make the ravioli that are supposed to come with the cutlet, and added oven-roasted cauliflower instead). I love the white wine & lemon sauce with the turkey. A tasty meal!

Salad to start with blue cheese and candied walnuts. Main of spaghetti alla Nerano with courgettes cooked in the air fryer instead of the deep fryer.

Cleaned the veggie drawer out. I pureed the onion, garlic, bell pepper and spinach with homemade bone broth, than added brown rice, pinto bean, fresh corn and a chicken breast. Finished it off with lemon juice and light sour cream. Was really nice!

We finally finished the leftover roasts in sandwiches we didn't finish on Monday. Carrot sticks with ranch for veggies with that. Trying to empty the fridge of leftovers before vacation at the end of the week.

After about 3 days of eating lower protein than normal I was very hungry for protein. So today I ate one meal w/lots of protein:
12 oz chuck steak, pan-fried in cast iron w/some ghee. That's a tsp. of butter melted on top.
Garden salad: mixed lettuce, grape tomatoes, cucumbers, black olives.
2 soft-boiled eggs.

My vision of Heaven1 -
Warm white beans with thyme, from Rachael Ray's book "30-Minute Meals 2." Cannellini beans, radicchio, garlic, olive oil, and thyme. I added lots of extra olive oil, a little lemon juice, and a piece of Parmigiano Reggiano cheese to nibble on. Quick & satisfying on a busy day. (This is meant to be a side dish, but I had it as a small meal instead.)

Tonight's meal is lemon-pepper chicken breast (baked in air fryer) + some delicious yellow crookneck squash sauteed w/peppers & onions in olive oil & Italian seasonings.
