    Chicken taco stew.

    2 -3 cans of low sodium diced tomatoes
    1- can of black beans
    frozen corn (however much or little you like.
    1 can of green chilis
    1 - packet of taco seasoning
    2-3 chicken breasts

    put everything in the crockpot minus the chicken. Do not drain the cans. Once everything has been added and is mixed place the chicken on top of the mixture cover and I set mine for 7 hours on low. Before serving shred the chicken and mix. Serve with lowfat cheese, light sour cream or tortillas. Or eat by itself my whole family loves it including my son (he is 8). The amount that this makes will usually feed my family of 3 dinner twice and lunch for hubby a couple of days. So if you have a larger family just add more.

    My husband and I make almost the exact same thing (minus the black beans and only 1 can of tomatoes). Delicious and filling!

    One of our favorites:

    Slow Cooker Ham & White Beans


    1 lb package dried northern beans
    ham bone, hocks, shanks or diced ham (about 1 pound)
    2 tsp onion powder
    6 cups water
    salt & pepper to taste

    Rinse and sort the beans for any pebbles. Add the the rinsed beans, onion powder, salt, pepper, and ham to the crock pot. Add water. Cover and cook on low about 8 hours, until beans are tender. Remove ham bone and any extra fat. Add meat back to the crock pot and mix. Serve with cornbread.

    Servings:1 cup, Entire recipe makes 10 cups ea.

    Crock Pot Chicken W/ Black Beans and Cream Cheese

    Total Time: 4 hrs 3 mins
    Servings: 4

    4 -5 boneless chicken breasts
    1 (15 1/2 ounce) can black beans
    1 (15 ounce) can corn
    1 (15 ounce) jar salsa, any kind
    1 (8 ounce) package cream cheese

    Directions:

    1. Take 4-5 frozen, yes, frozen, boneless chicken breasts put into crock pot.
    2. Add 1 can of black beans, drained, 1 jar of salsa, 1 can of corn drained.
    3. Keep in crock pot on high for about 4-5 hours or until chicken is cooked.
    4. Add 1 package of cream cheese (just throw it on top!) and let sit for about 1/2 hour.
    5. All done and enjoy!

    check out www.skinnytaste.com I am currently making the pork carnitas slow cooker recipe and they are fabulous. My family loves it. I have also made the chicken pot pie soup and again it was good. She has easy to follow low fat recipes. Good luck!

    That is my new FAVORITE website. Great suggestion. I have been trying recipes from there for the past couple of months and everything I have tried has turned out great. I second, very strongly, this suggestion!

    My family loves salsa meat. Choose your favorite meat, we use chicken with green salsa or pork with red salsa. Then when I am ready for dinner I either serve it with rice, or tortillas and whatever sides you may like with it.

    Makes a yummy leftover lunch or good with eggs the next morning too.

    pork stew meat
    chopped carrots, chopped red potatoes (with skins), frozen corn, green beans, & peas, celery, diced onion
    1/2 packet onion soup mix
    1-2 beef boullion cubes
    1 can Campbell's cream of mushroom soup
    1 can water
    dash of onion power and pepper

    1/2 cup sour cream

    brown pork with the onion and celery, put all in crock pot, except the sour cream. cook on high 1 hour, then turn to low 4-5 hours

    1 hour before eating add the sour cream, thicken with 1/4 cup flour and water if needed before serving.

    Ghoulash (1 cup serving sizes)

    Ingredients:

    Great Value - Sliced Stewed Tomatoes, 2 container

    Heinz - Reduced Sugar Tomato Ketchup 0.5 container

    Ragu - Elbow Macaroni, 2 cup dry = 1 cup cooked

    Lean Ground Beef 93/7, 1 container (16 oz ea.)



    How long do you simmer it for, my hubby would love this

    Boil the elbow macaroni according to package directions. While the macaroni is boiling start brown the ground beef. Drain the beef and macaroni. (This can even be done the night before and put in a container in the fridge) Then all you have to do is dump in the crockpot in the morning.

    Next add, reduced sugar ketchup and stewed tomatoes and whatever other spices you like. I also add black pepper and onions or onion powder. Stir well.

    Simmer on low for a few hours. be careful not to cook it too long or the macaroni can get soggy.

    Makes 8 - 1 cup servings

    each serving has:

    219 calories
    28 carbs
    9 g fat
    3g fiber
    13g protein
    7g sugar
