  • Use a cornish hen. I buy them and they're the perfect size for my husband and I for two-three meals.

    Oops. Meant to quote someone who said they didn't have a big oven so couldn't use a whole chicken.

    CROCK POT ROAST

    1 roast
    1 pkg. ranch salad dressing mix
    1 pkg. Italian salad dressing mix
    1 pkg. brown gravy mix (fat-free)
    1-1/2 cups water

    Mix all the dry ingredients with the 1-1/2 cups water. Place roast in crock-pot. Pour the mixture over roast and cook on low overnight.
    Once you do this recipe - you will never prepare any other way. The gravy it makes - is to die for.

  • Hearty fall chicken and vegetables

    Chicken thighs, 6. I put them in frozen.
    2 cups chicken broth
    1 cup red wine
    1/2 cup quinoa ( I use the Ancient Grains red Inca variety, already washed)
    half a bag of mixed peppers and onions
    cherry tomatoes ( I usually throw in a plastic container's worth)
    mushrooms ( again, a container)
    3-4 TBS tomato paste
    salt to taste
    generous dash of pepper
    TBS or so of rosemary
    TBS or so of thyme

    I put this on low and it cooks all day while I'm at work. It makes 4 heaping bowlfuls or 6 smaller servings. Around 450/serving if you divide it into fourths.

    This is the roast recipe I use, but mine calls for 1/2 cup water. It is delish!!!!

    Can never have too many awesome crock pot recipes! I have two crockpots and 3 hungry teenage boys! So I'm looking forward to testing some of these recipes!

    Here is a couple of my own
    Vegan 15 bean chili (can totally add whatever meat you want)

    rinse then cover to soak a 1 pound bag of 15 bean cajun soup mix (I actually soak during the day and cook it overnight so I can take it with me for work lunch)
    After soaking the beans (about 8 hours. Reduces their gas value) drain and rinse the beans and place them in the crock pot with the following:
    6 cups of water
    1/2 a jar (32 oz) Kirkland organic salsa (substitute your favorite, or just a large can of stewed tomatoes)
    one onion, chopped (I used dried onion in a pinch)
    garlic salt to taste (I prefer fresh minced garlic, which reduces the sodium value)
    cajun seasoning packet that came with the beans (if you can't find cajun bean mix or just if you prefer, you can use a couple tablespoons of chili powder)

    Cook on high all day. It is actually better the next day or after frozen and reheated. (if you can manage to keep any around that long)
    Great over rice or on a baked potatoe.
    Serve like you would any chili...with sour cream (I use "better than Sour Cream") and chives
