    Nice chicken tostadas! boil chicken then shred and cooked it with jalepenos, tomatoes, cilantro, onion. then top with lettuce, tomatoes,cheese, sour cream or whatever you would like. i dont know how healthy this is but i love them and thats my comfort food

    i know this may sound really weird, but i love microwaving my eggs.
    it's so easy and it only takes a minute.

    there are these minute muffins that you can make:
    1/4 cup of quick oats
    1 egg, whisked/beaten
    2 tbsp almond butter or peanut butter

    you can just whisk these up in a mug and pop it in the microwave for a minute.
    it's so delicious, i promise you it's worth it. it' makes a really great breakfast.

    My fav chicken recipe, not even 300 calories for a massive plate:

    1 small chicken breast
    10 mushrooms
    Half head Savoy cabbage
    1 Leek
    1 tablespoon light olive oil

    Fry off mushrooms and leeks in oil Move to side plate for later
    At the same time Chop cabbage to quite big chunks and boil for 10 minutes then strain and move to side for later
    Fry off the chicken, once cooked add the mushrooms, leeks and cabbage and fry altogether for 4 or 5 minutes

    Add it to your plate and enjoy! I sometimes make enough for two portions and save for next day. If I do that I add a small amount of gravy.
    Sounds horrible but tastes amazing :) and I avoid carbs so great for that!

    baked chicken seasoned with lemon pepper and italia seasoning. Baked at 350 degrees for one to two hours covered in aluminum foil. Goes great with steamed fresh green beans.

    I'm having lemon pepper rosemary chicken tonight

    1 whole chicken
    2-3 lemons
    1 tbsp olive oil
    salt and pepper ( I use kosher salt)
    fresh rosemary

    chop rosemary
    in a small dish combine olive oil, juice from lemons, a little salt and pepper and the rosemary
    put salt and pepper on outside of chicken put chicken on roasting rack inside a baking dish
    put lemon peals inside chicken. this infuses flavor and keeps chicken from getting dry
    put oil mixture under skin of the breast then poor the rest over the chicken
    pour a little water in the dish enough to cover the bottom. add lemon juice and rosemary stems to dish if desired.
    roast chicken according to the package it came in.
    check temp with meat thermometer before slicing and eating.

    I serve this with any vegetable but I like it with grilled potatoes and zuchinni.

    I tried this last night, bit of a mash up but to my surprise it tasted yummy.

    Three chicken breasts(skinless)
    Minced garlic
    crushed ginger
    Salsa
    Curry powder
    Apricot chicken seasoning

    Throw it all in the crockpot until cooked mine took about three hours.

    Chicken with Spring Veggies and Couscous:

    Ingredients

    3 tablespoons unsalted butter
    4 scallions, white and green parts separated, and thinly sliced crosswise
    2 wide strips lemon zest, plus 1 tablespoon lemon juice
    Coarse salt and ground pepper
    1 pound asparagus, trimmed and cut into 1/2-inch pieces
    1/2 cup frozen peas
    1 cup couscous
    Leg and thigh meat from 1 rotisserie chicken, torn into bite-size pieces
    2 tablespoons chopped fresh parsley

    Directions
    In a medium saucepan, melt butter over medium-high. Add scallion whites and cook, stirring constantly, until softened, about 3 minutes. Add lemon zest and 1 1/4 cups water and season with salt and pepper. Cover pan and bring liquid to a boil, then add asparagus and peas. Return to a boil and stir in couscous. Add chicken and remove pan from heat; cover and let sit 7 minutes. Add lemon juice and parsley and season with salt and pepper. Fluff couscous with a fork and serve.

    Serves 4

    Good ideas here.

    I'm making garlic and herb chicken tonight.

    2 large chicken breasts
    1 packet Land O' Lakes Sautee Garlic and Herb thingies

    Just heat the sautee starter packet on medium heat in pan and sear chicken on each side. Turn heat to medium-low and cook covered turning often until chicken is done. Takes a while because the temp is fairly low, but it comes out very juicy and tasty.
