    Also, my favorite crockpot recipe is Chicken Enchiladas. It is as follows:

    Crockpot Chicken Enchildas

    4-6 boneless skinless chicken breasts
    8 oz cream cheese
    2 cans enchilda sauce, red or green
    tortilla shells
    shredded cheddar cheese

    Place chicken breasts in crockpot, and smother with one can of enchilda sauce and the cream cheese (I just leave it in a block and dump the enchilda sauce on top). Cook on low all day. When ready to prepare meal, stir the chicken well....it will just fall into pieces, and the cheese and enchilda sauce get mixed together. It kind of looks disgusting, but I promise it tastes good.

    Spread chicken mixture down the center of softshell tortillas, and roll up. Place seam side down in a 9 x 13 inch casserole pan. You can fit six enchildas in the pan. Pour second can of enchilda sauce on top and cover with shredded cheddar cheese. Bake at 325-350° until heated through, approximately 30 minutes. If you make these ahead of time, you will need to bake longer.

    Serve with lettuce, more shredded cheese, sour cream, black olives, etc. to your taste.

    The leftover chicken mixture makes great chicken tacos, and this recipe freezes well. You can use low-fat or non-fat cream cheese and whole grain tortillas to make it healthier.

    A good way to add some extra nutrients and antioxidents is to add some black beans along with the chicken! yum! I also like to sprinkle my enchiladas with fresh tomatoes and cilantro.

  • Huh! I probably have 10+ cookbooks for recipes and 5 or 6 crockpots of varying size (mini to large roaster pan) and almost NEVER use them. Cooking for 1 though, I don't need batches that large. Everything sounds really good though.

    I am trying to get more fiber in my diet, and I found this recipe. The chili is delicious, filling and wonderful on cold days!

    WHITE CHILI

    4 boneless, skinless chicken breasts
    2 beef bouillon cubes
    1 large onion
    2 large stalks of celery
    1 tbsp butter
    5 (16 oz) cans reduced-sodium Great Northern Beans, drained and rinsed
    1 (16 oz) can diced tomotoes
    2 (1.35 oz) packages of McCormick's White Chicken Chili Seasoning dry mix

    Place chicken in a saucepan of pot. Cover chicken with water until water reaches about 1" above the chicken.
    Add the bouillon and stir.

    Bring to a boil and continue to cook at a boil until chicken is no longer pink. Do not discard chicken water right away!

    While chicken is cooking, dice onion and celery. Saute onion and celery in butter until cooked. Add onion and celery to crock pot.

    Once chicken is cooked, shred or cut cooked chicken in small pieces. Add to crock pot. Add beans, tomatoes, chili seasoning and a little bit of the chicken water to the crock pot. Stir well. Cook on low for at least one hour.

    Makes 12 servings (1 cup each)

    Calories: 225
    Fat: 1.7g
    Sat. Fat: 0.7g
    Fiber: 9.7g
    Carb: 33.2g
    Protein: 19.8g
    Sodium: 659 mg
    Cholesterol: 25.3 mg
    Calcium: 105.0 mg
    Total sugars: 3.2g

  • I have a great 24 page pamphlet of great recipes and tips when it comes to using your slow cooker that I received from my nutritionist a year or so ago. What is really nice about it, is she has included the nutrition facts for the recipes so you know how many servings there are and the contents of each serving!
