Omelette fail tonight, but it was tasty. I added mushrooms, red bell pepper, green onion, turkey, cheese and pintos.

Dinner tonight was a cup of my pinto beans, egg sandwich on an english muffin with mixed sprouts and mayo, macaroni salad, and raspberries.
For dessert, I had one of these pumpkin muffins.

Big ol' salad night. I made a salad of mixed greens, mixed sprouts, roasted beets, green onion, cherry tomatoes, red grapes, red bell pepper, raisins, pecorino cheese, turkey, mini portobello mushrooms, garlic salt and black pepper; a couple scrambled egg muffins; a mini almond flour pumpkin muffin.

Not dinner, but dessert. Dinner was turkey chili, but it's gone now, so I can't take a pic. This is a chocolate chip cookie cheesecake. It's got a thick, chocolate chip cookie crust with a layer of plain cheesecake, sprinkled with mini chocolate chips. Yes, it was delicious.

They had some sausage jambalaya and some steakhouse chili in the deli at the supermarket tonight. The jambalaya was really good, but a bit spicy for me, so I mixed it with the chili and YUM! Had a bowl of that (I'm calling it Jambachilli) with sides of red bell pepper, cucumber and red grapes.
Later, had piece of chocolate cake.

Brunch food pictures, because pictures taken at every other moment of the day make food looking depressed, thanks to the good ol' canadian winter.
We had 14 people over on Christmas Eve, thus resulting in plenty of leftovers for the week to come. We have ham, smoked salmon, four different kind of cheese and charcuteries to use, as well as some bread and leftover veggies. We have to be creative because we don't like to throw out food.
The first morning, I made crêpes stuffed with ham, asparagus, béchamel and cheddar cheese, gratinéed with more cheddar. It was good.
Yesterday, I put some smoked salmon on whole wheat bread, I added asparagus and soft scrambled eggs, and I gratinéed everything with some Oka cheese. Surprisingly, it was brunch for less than 500 calories, and it was wonderful.
Yummy!
Now, I need to resist the urge to whip up some mac an cheese with the ham and the cheeses. That will be tough.0 -

Brunch again! Omelet with ham, Oka cheese and asparagus, and a piece of whole wheat toast.
No willpower: three cheddar mac and cheese with baked ham on the bone, and a side of roasted asparagus. A 650 cals dinner that worth every bites.

- Gatto di Patate - by request (they loved it last week) plus home made wheat bread, apple cake - yes we are still eating it... Tomorrow they may be on their own in the kitchen, naw I am planning brunch but tonight to tired to think about it yet.

OK how is everyone eating all these goodies and stayiny thin? I also see white carb? New to this been on nutrisystem and looking for ideas now that I am on my own:-)

There's nothing wrong with carbs, white or any other color. Use MFP to calculate a reasonable deficit and calorie goal to hit each day then eat whatever you like within those calorie goals. Some people track particular macro ratios (protein, fats, carbs) but many just try to stay within a total number. Weighing and measuring your food, logging everything, is often very helpful to stay on track. There are lots of successful people on here who eat very delicious food and still achieve their goals.

Every month I try a new recipe from a different culture/country. It's a lot of fun, actually. And with the Internet, I can get authentic recipes straight from the people themselves, not just some Americanized version - sometimes I need to translate, though. This month was Cuba. It's pulpeta, a meatloaf stuffed with hard boiled eggs and green olives. Served with "Moros y Christianos" (Cuban beans and rice.) It was my very first Cuban food, and it was delicious, by the way. (Sorry, not the best pic.)
