Take the amaranth seeds, chia, rolled oats, and hemp hearts and toast for 15-20 minutes at 350. Let cool.
Melt butter and add in PB, vanilla (cinnamon optional). Mix dry and wet ingredients (minus chocolate chips). Then mix in chocolate chips. Press onto parchment paper and bake 350 for 30 minutes (?). Let cool. Cut into 24 pieces or whatever size you want. Again, I'm just making this up so I may make adjustments as I go once I see how it really looks. I'll let you know how it works out. Add salt to taste, too.

I can't eat coconuts, but I know.vegans who sub coconut oil for butter - start with less oil because I have never done it before and I am nit sure it's one to one.
Oh, remind me of this if/when I cook something you are going to eat. Coconut oil is something I cook with regularly and I use coconut milk/cream in certain dishes. There are other ways for me to cook so just remind me.
The bars could easily be made without coconut too. It is almonds for me, almost as bad as wheat.0 -

I felt much better than yesterday, & made it the whole day at work. I still feel a bit crampy in my stomach & gassy, but other than that it's alright.

I knew I was going to start my lifestyle change today so the whole weekend I intentionally ate any and everything I could get my hands on that I knew I wouldn't be able to eat anymore...im talking chicken nuggets, burgers, pizza, biscuits and gravy, cheese puffs, chips, fried chicken, slushes, ice cream, pasta, potatoes, fries, fried mushrooms...I probably consumed 10,000 calories this weekend0

You really don't have to exclued anything. If it is something you cannot eat in moderation, then yes, you might need to exclude it. Mostly, just make sure your calories are within your goal.0 -

+1. Do you really want to go without those items for the rest of you life? Try fitting in your craving in conscious portions along with the healthy stuff. Life without ice cream is not a life I want to live! lol0 -

If you can't have certain foods then like @crosbylee said exclude it until you get used to eating it in moderation.
@aubreywhitlow don't go into this as thinking you have to give up everything you like because, you will get burnt out on eating 'healthy' foods & then have a massive binge.0 -

Lots of people do that, but I have found that I do better at losing weight when I work those things into my diet in moderation. Obviously not every day, but maybe fried chicken one week and biscuits and gravy another week.0 -
