Been traveling for several weeks, eating restaurant food. Glad to be home and transitioning back to home cooking. Even trying to make good choices, it's still not the same (too much salt, too much filler, too much fat/oil, too much of too much ...).
Last night: simple baked chicken with roasted root veggies (potatoes, carrots, onions) and side tom/cuke salad. Tonight: another simple baked chicken (different flavorings) with asparagus patties (new recipe, see foodwishes.com).

That bread looks great! Crust even looks a little shiny, something I've only achieved so far when "throwing" water into the hot oven to create a burst of steam. Is this how it comes out when baked in a Dutch oven? With the lid closed? I'm really curious because I want to bake my own bread again after getting away from it the last couple of years.0 -

Haven't screwed it up yet. I try not to eat that much bread, but when I want it, I now make it because it is sooo easy!!!0 -
Thanks, madwells1! I am familiar with the no knead method, but have never used a Dutch oven. Might be time to finally get one!0

Preheat the dutch oven before throwing in your dough and give the top of the dough a spritz of water when throwing it into the oven and use the dutch oven's lid for the first part of the baking. I love this recipe from Serious Eats.
